Fantastique Creme Brulee :)

Hi Friends :)

What  A day!!!! I made an exotic French Dessert CREME BRULEE.It is also known as Burnt cream or Trinity Cream which is mainly a rich traditional dessert consisting of custard such as vanilla topped with hard crunchy caramelized layer :) Its served cold.

I did it and you can do it :) Here the french recipe go on below as I love French cuisines:)

Ingredients :
  • 1 cup  Heavy whipped cream
  • 2 Egg yolks 
  • 1/4 cup sugar
  • 1/2 Tsp Vanilla Extract
  • 4 Tsp Brown Sugar or White Sugar
Note : You can increase the quantity of the above ingredients as double.
Method:

  • Separate the egg yolks from egg whites.
  • Put egg yolks into the heat proof bowl,Add 1/4 cup sugar to it and mix well until smooth by using whisker. Set aside
  • Take a sauce pan ,pour the cream over to it and heat it on the medium low flame until it is steaming and you may see bubbles on the edges and don't allow it to boil.
  • Turn off the heat.Allow it to cool for few minutes
  • Add 1 tablespoon of heated cream at a time
  • Whisk the egg and sugar mixture constantly as you are adding the cream mixture slowly to avoid curdling.
  • Once you added about few tablespoons of cream into the egg and sugar mixture,proceed further to pour the remaining cream mixture to it and make sure while you are whisking it gently until smooth.
  • Once it is well incorporated and pour the custard mixture through a fine mesh sieve into another bowl or measuring cup.It helps to avoid any lumps formed.
  • Add vanilla extract to it.
  • Mix well until it is set.
  • Take a boiling water and pour on to the deep rectangular baking tray
  • Pour the custard mixture into the ramekins evenly..
  • Place the ramekins onto the water bath of the baking tray.The water level should  rise so that it has reached the half way to the sides of the ramekins.
  • If the water level does not rise,then pour a boiling water carefully until it is risen up the halfway of the sides
  • Also be careful not to splash the water to the ramekins
  • Place the evenly custard ramekins into the pre heated oven for about 300 C for about 30 to 40 minutes or until it is set around the edges and the middle is somewhat little movement and it is similar when you jiggle Jelly O.
  • Remove  it from the oven and allow it to cool on the cooling rack.
  • Once it is cooled completely, cover each and every ramekin with plastic wrap and set it into the refrigerator for about 4 to 8 hours or overnight.
How to do: It has 2 methods one is using Blow torch technique or using Broil it in the Oven method.

Broil Method.
  • Before ready to broil allow the ramekins to cool slightly.Preheat the oven as " BROIL" not BAKE
  • Place each and every teaspoon of brown sugar or white sugar evenly to the ramekins.
  • Place the sugar coated custard ramekins into the baking sheet and put into the oven for about 10 minutes  at least 4 or 6 inches away from the top surface of the oven inside.
  • Broil it until it is slightly brown on the top of the custard mixture ramekin
  • Do not or over cook nor over heat
  • Once brown then take out from the oven and allow to cool slightly.
  • Serve Cold or warm with a dollop of whipped cream and a whole strawberry on the top.
Blow Torch Method.
  • Place each and every teaspoon of brown sugar or white sugar evenly to the ramekins.
  • Place the sugar coated custard ramekins into the baking sheet.
  • Heat the coated sugar  with the flame until it bubbles and turns golden brown  by using blow torch or kitchen butane torch.
  • Allow to cool slightly.or you can refrigerate it before serving.
  • Serve Cold or warm with a dollop of whipped cream and/or  a whole strawberry on the top.

An Indian Dessert KULFI :)

Hi friends

Am really happy on this month July because my blog has got an Award from my dearest friends.I am posting favorite dessert Kulfi as my heartfelt thanks to everyone and blogger friends Prathibha and Julie who has given an award  :) 

Since long time We missed Indian dessert that is mainly Kulfi .Very rare to get kulfi from a kulfi seller on the door steps.Mostly my hubby and me used to have it when he returned from his office when in India Its my sweet memory to have kulfi along with my parents and my hubby..I want to make it at home and finally did it :) It came out an awesome and tasty in 1st attempt :) My daughter loves kulfi as it is first time for her to have it :)

A kulfi or Qulfi is very popular Indian frozen dessert and its usually prepared traditionally by adding an evaporated milk,sweetened condensed milk,double cream,and nuts

Here the recipe goes on below.Try it at home.

Ingredients: I am writing 2 ingredients for use in India and Abroad.

****** If you are in India you can try this recipe as below.
  • 2 1/2 cups milk plus 1 Tablespoon Milk.
  • 1 cup or 1 can sweetened condensed milk
  • 1/4 cup Milk powder
  • 1/2  cup Amul Double Cream
  • 2 Tablespoons Sugar or to taste.
  • 2 Tsp Cardamom powder
  • 1/2 cup whipped cream
  • A pinch of saffron threads
  • 1 cup coarsely chopped cashew nuts,pistachios and almonds.
Method:

  •  Take 1 Tablespoon milk make it warm by using an oven for 30 Seconds. or boil the milk on the stove,take out 1 Tablespoon milk once its warm.Pour it into the bowl.
  • Add Saffron into the warm milk and let it sit for about 1 minute or until the color changes.
  • Take a nonstick saucepan,add milk,milk powder,condensed milk,sugar to taste.Let it boil till the mixture gets thickened by simmering on medium heat for about 10 minutes.
  • Turn off the heat, add cardamom powder,whipped cream and saffron milk. Mix well until its well combined.
  • Add the nuts to it.
  • Mix well..
  • Pour it into the kulfi mold.
  • If you are not having kulfi mold then its an alternative method you can use plastic cup or glass, pour it into the plastic glass or cup.
  • Cover it with aluminium foil and make it hole to allow to insert an ice-cream stick or bamboo stick into it.
  • Set it in the Freezer for about 30 minutes
  • Again stir well until all nuts are well incorporated.
  • Set again in the freezer for about 3 to 6 hours or until it is set.
  • Unmould the kulfi. You can do it by placing the kulfi molds or plastic glass or cup under the running water for about few seconds.
  • Pull the stick gently and it will come out.
  • Its ready to serve :)

****** If you are in Abroad you can try this recipe as below.
  • 12 ounces or 1 can Evaporated Milk
  • 14 ounces or 1 can sweetened condensed milk
  • 1 cup Heavy Whipping Cream
  • 1 Tablespoon Sugar.
  • 1 Tablespoon Warm milk
  • 2 Tsp Cardamom powder
  • 1/2 cup whipped cream
  • A pinch of saffron threads
  • 1 cup coarsely chopped cashew nuts,pistachios and almonds.
Method:

  •  Take 1 Tablespoon milk make it warm by using an oven for 30 Seconds. or boil the milk on the stove,take out 1 Tablespoon milk once its warm.Pour it into the bowl.

  • Take a big deep bowl,add evaporated milk,sweetened condensed milk heavy whipping cream,cardamom powder,whipped cream and saffron milk. Mix well until its well combined.
  • Add the nuts to it.
  • Mix well..
  • Pour it into the kulfi mold.
  • If you are not having kulfi mold then its an alternative method you can use plastic cup or glass, pour it into the plastic glass or cup.
  • Cover it with aluminum foil and make it hole to allow to insert an ice-cream stick or bamboo stick into it.

  • Again stir well until all nuts are well incorporated.

Granola Fruits Trifles

Hi friends!


Well I had been thinking of what kids are rushing for school time.Without a proper breakfast,time has been elapsed.so thought to give quick breakfast which gives you very healthy one that is full of rainbow colors as fruits made with homemade granola and homemade strawberry yogurt.Kids will be attracted to see this  and eat soon :) Isn't it great as it is all being homemade food :) Here the recipe goes on below. Its very simple.


For making homemade foods such as granola and flavored yogurt,you can make it at weekdays and store it in air tight container. You will have time to assemble the layers while making it for your kid and your family members.


Ingredients: Serves 2 cups.

For Homemade Granola: I think you can use store bought granola.
  •  2 cups oats
  • 1 cup sliced almonds,cashew nuts and pumpkin seeds
  • 1/4 cup honey.
  • 1/4 tsp salt.
  • 1 Tablespoon Unsalted butter(melted) or Vegetable oil
Method:
  • Set a baking sheet grease it with butter or line it with parchment paper.Preheat the oven to 350 F or 180 C
  • In a bowl mix all the dry ingredients till well combined,add the honey and butter or oil till well mixed 
  • Make sure its well coated with butter mixture.
  • Spread evenly on to the baking sheet
  • Bake it for about 20 minutes or till its golden brown and fragrant.
  • Set it to cool
  • Store it in air tight container once its cooled.
  • Homemade granola is ready to serve.
For making homemade Strawberry yogurt  : you can buy Store bought Strawberry Yogurt
Ingredients:
  • 1/2 cup Fresh strawberries chopped into halves
  • 1/4 cup Milk
  • 2 Tablespoons Custard powder
  • 1 cup Homemade thick curd.
  • 1/3 cup Sugar to taste for yogurt.
Method:
  • Take a saucepan, boil the milk, add the custard powder once it is boiled.Add 2 tablespoons sugar from 1/3 cup sugar.
  • Once it is thickened while stirring, remove from the heat and set aside to cool
  • Take a mixie or blender, Add the strawberries,cooled mixture of milk custard,curd into the mixie or blender till it is well combined. 
  • Add sugar to taste.
  • Pour it into the container with a tight fitting lid.
  • Keep it in the refrigerator for about 2 hours or until it is set.
  • Thick strawberry yogurt is ready.


For Assembling the Granola Fruits Trifle

Ingredients:

  • Yogurt Plain or strawberry flavored or  any fruit flavored of your choice.
  • Fresh Fruits such as Raspberry,Blueberry,Strawberry,Apples of your choice.
  • Granola
Method:
  • Take a tall glass or serving bowl, Place some granola into the bottom of the glass or bowl by adding a spoonful  of yogurt plain or flavored.
  • Add chopped fruits or whole fruits
  • Again add granola over the fruits
  • Add a spoonful of yogurt
  • Add fruits.
  • Repeat the layers if you have space.
  • Use as much as u like. or add little.
  • Its served

Strawberry Icecream with Pistachios :)

Hi friends!

On our busy weekend,It was very hot at afternoon and my daughter had asked for an ice-cream.I don't want her to get upset so I made her favorite fruit Strawberry ice cream.She was very happy having a homemade ice cream:) Here the recipe goes on below and make your kid feel delightful or even good for potluck or get-together parties etc..


Ingredients:
  • 1 cup pureed strawberries plus extra 6 strawberries chopped finely
  • 1 can sweetened condensed milk
  • 1/2 cup whipped cream
  • 3 Tablespoons for chopped strawberries if it is bitter.
  • 1/4 cup coarsely finely chopped pistachios
Method:

Mix strawberries,sweetened condensed milk until well combined.Fold in the whipped cream and pistachios.

Pour it into the large container with tight fitting lid.Keep it in the freezer for about 2 hours or until it is set.

Take a spoon and put chopped strawberries into the container and fold it to cover the chopped strawberries and set again to the freezer for about 2 to 3 hours or until it is set.

Take an ice cream scoop and put it into the serving bowl.

Garnish it with pistachios or a one strawberry on the top.

A Special Dessert from Central Asia - Baklava :)

Hi friends :)


Why I am starting this recipe is because I asked my friend What is that? I have not heard nor taste it after she gave it to me.Its so golden crust on the top soaked in  honey and sugar syrup.Its so tasty and an aromatic after eaten :) Wow I want to make it for sure and it took me for a while to get the perfect  baklava dessert. I baked it almost midnight :)Wah Wah Wah What an aromatic smell while baking Baklava at my home :) After waited for about 8 hours of soaking at overnight.On the next day,we ate it at morning .It was so yummyyyyyyy and gifted it to my friends and they said Awesome. :)Here goes the recipe as below :)
 A Baklava is a rich sweet pastry made up of multiple layers phyllo coated with chopped nuts of your choice and sweetened with honey and / or sugar syrup.
Phyllo sheets are  mostly available in an Indian or Pakistani based groceries or at super centers.Its very tough process to get super duper thin phyllo sheets when trying it at home. If you didn't get sheets then no problem you can try my recipe Apple Strudel basic dough to start the process.Once you get super thin dough then cut it carefully to get rectangle shape (12" *17 ") or varies for Rectangle pan or Square shaped for Square pans.


In my opinion if the phyllo sheets are not available in India then try for puff pastry sheets.I think it will give you better idea and can follow the recipe as follows.Try it at home.


Ingredients :

1.Filling: I had used nuts which are available at my home.You can add any nuts of your choice.

  • 1 cup chopped walnuts
  • 1 cup sliced cashew nuts
  • 1 cup sliced almonds
  • 1 cup chopped pistachios
  • 3 Tablespoons sugar
  • 1/2 Tsp ground cinnamon 
  • 1/2 Tsp ground cloves
2.Syrup:
  • 2 cups Water
  • 2 cups sugar
  • 1 cup honey.(If you don't like to add more.then can reduce 1/2 cup or as an optional )
  • 2 Tablespoon Lemon juice.
  • 1 stick cinnamon(optional) to enhance the flavour.
3. For the base and layers and on the top
  • Phyllo Sheets atleast 28 sheets is that I used it.
  • 1 1/2 cups unsalted butter (melted)
 Method:

For Filling: 
Place all the ingredients into the bowl and mix well. keep aside.

For preparing the syrup:
  • Place a deep thick bottomed sauce pan on the stove,combine water,sugar,honey,a stick of cinnamon and lemon juice
  • Bring it to boil.
  • Stirring constantly for about 20 minutes
  • Remove from the heat and allow it to cool.

Here are the step by step photos of my baklava baking :) 
For making the Baklava layers step by step wise:

  • Butter the base of the rectangular or square baking pan
  • On a dry work surface,place one sheet of phyllo and brush it with butter by using pastry brush.
  • Place another sheet of phyllo on top and brush it with butter.Repeat  for 10 times
  • Place the buttered phyllo sheets into the baking pan.
  •  Spread 3 cups of mixed nut fillings evenly over the phyllo.
  • Brush the butter on each and every of 7 phyllo sheets and place over the nut filling.
  • Again spread over the remaining nut fillings evenly over the phyllo
  • Butter and layer the remaining sheets atleast 10 to 12 of phyllo.
  • Place it on the top
  • Tuck overhanging edges under.
  • Cut into desired diamonds or squares of your choice
  • Brush the top with remaining butter.
  • Bake in a preheated 350 F or 180 C  oven for about 40 minutes to 1 hour or until golden brown.
  • Once its removed from the oven.
  • Pour the cooled syrup evenly over the hot Baklava
  • Let it soak for about 2 to 3 hours or overnight.
  • Serve it immediately after being soaked.
  • Yummy Baklava is served with a top of nuts or your choice.
