Today is my special day that is my birthday as well as anniversary and I am really sorry for the much delay in posting this post. It was wonderful day on my birthday and got loads of wishes from my dear friends :):):) Finally got laptop on my lap.Am very happy and can keep in touch my blogging life with you all my dear blogger friends :) :)
Well I had checked my mail regarding baking partners challenge # 4.It was completely different not cakes nor cookies nor sweet tooth pastries :) Whoa It was dinner rolls because it is great feast for the upcoming THANKSGIVING DAY in the USA :)It is really superb idea by our beloved friend Swathi :)She sent it to everyone and I am so new to hear about "Dinner rolls" She has given very wonderful 7 types of dinner rolls and allows group to choose any 3.and keeps on watching the video how to make dinner rolls.many and many times till I get confident for making process on dinner rolls.I kept myself delaying is because I want those to get it perfect.I keep on watching the video many times everyday till I am fully prepared :).After super duper busy schedule I am free for a day and I must finish those dinner rolls in no time :).I
While making dough after added with yeast I kept my fingers crossed fearing that yeast should risen up.After an hour it has risen up.Phewwwwww :) I had started making rolls.Want to know what is my favorite roll ? Well it is BRAIDED ROLLS because its like braiding to my hair :) LOL :) I am really enjoyed by making dinner rolls in short time.I had chosen 6 rolls such as
- CLOVER ROLLS
- BRAIDED ROLLS
- KNOT ROLLS
- LION HOUSE ROLLS
- CRESCENT ROLLS
- KAISER OR ROSETTE ROLLS
Well let's start for making dough step by step as main ingredients are given into 2 versions one is egg less and other one is egg version. I have made rolls as an Egg version one.
Here is the Egg version ingredient given by Baking Partners
Ingredients:(RECIPE WITH EGG)
- 2 cups warm water (110-115 degrees)
- 2/3 cup nonfat dry milk (instant)
- 2 Tb. dry yeast
- 1/4 cup sugar
- 2 tsp. salt
- 1/3 cup shortening (butter or margarine)
- 1 egg
- 5-5 1/2 cups flour, all purpose (bread flour can be used if you have it on hand)
Ingredients: (Recipe without Egg)
- 3 1/2 cups King Arthur Unbleached All-Purpose Flour or any brand All purpose flour
- 2 teaspoons instant yeast
- 2 tablespoons potato flour or 1/4 cup instant potato flakes ( see notes)
- 3 tablespoons Baker's Special Dry Milk or nonfat dry milk ( see notes)
- 2 tablespoons sugar
- 1 teaspoons salt
- 4 tablespoons soft butter
- 2/3 cup lukewarm water
- 1/2 cup lukewarm milk
Notes
· If you don’t have milk powder in hand, you can increase milk to ¾ cup
· Substitute potato flour with ½ to ¾ cup cooked mashed potato
· If you don’t have milk powder in hand, you can increase milk to ¾ cup
· Substitute potato flour with ½ to ¾ cup cooked mashed potato
Notes:
I had followed the egg version and I used butter .Here are my changes on this recipe to reduce to half.:)
Ingredients:(RECIPE WITH EGG)
- 2 cups warm water (110-115 degrees) 1 cup Warm water
- 2/3 cup nonfat dry milk (instant) I used normal milk(1/2 Cup)
- 2 Tb. dry yeast(I used 2 1/4 tsp )
- 1/4 cup sugar
- 2 tsp. salt(1 Tsp Salt)
- 1/3 cup shortening (butter or margarine) I used butter
- 1 egg
- 5-5 1/2 cups flour, all purpose (bread flour can be used if you have it on hand) Reduced to 4 cups flour and 1/2 cup for dusting the flour to avoid sticky on my hands
Method:
- Mix all the dry ingredients together into the bowl.Whisk together to avoid lumps after bring sifted.
- Meanwhile heat the water and milk on the stove top or microwave it for about 30 seconds.
- Take 4 Tablespoons warm water and add yeast to it and allow it to foam.
- Add softened butter
- Add yeast mixture to the dry ingredients.
- Add egg.
- Using electric mixer or hand mixer with dough hook attachment,mix well gently.Add the lukewarm water and milk together to the egg and yeast flour mixture.
- The dough should be kneaded gently on the floured working surface counter top till your hands are free from sticking it.
- Knead more gently for about 20 minutes.
- Take a bowl grease it with butter or shortening.Put the dough on it.
- Cover it with loosened kitchen towel on the top of the bowl.
- In case of winter climate keep the covered dough bowl into the oven with light on.it will help it to keep warm and allow to risen up.
- After 1 hour, the dough will rise double in size.
- Knock out gently
- It is ready to make rolls :)
- Once you made the rolls into different shapes.Transfer the shaped dough rolls on the baking sheet and muffin pan and covered it with plastic wrap or kitchen towel.
- Allow it to rise for about 30 to 90 minutes.
- Before 10 minutes has been elapsed for it to rise up.
- Preheat the oven to 325 F
- Keep the uncovered unbaked rolls into the oven.
- For topping the shaped rolls you can either use egg wash or melted butter to get golden color
- Bake it for about 10 to 15 minutes or until the top crust is golden in color.
- Allow it to cool on the cooling rack or serve warm with butter or jam :) or plain one with a cup of Tea :)
