An Empanadas A savory pastry :)

Hi Friends


I had posted sweet tooth pastries.Now its my turn to post a savory pastry especially both Vegetarian dish and Non vegetarian dish :)  :) For non vegetarians, can use chicken and Vegetarians can use potato,green peas,carrots.An Empanadas is originally famous in South America and Spain.This is made by placing the filling in the middle of the flattened dough and seal it by pinching  the edges. It can be baked or deep fried.I prefer baking because it gives nice texture.
I made Chicken Empanadas.But for Vegetarians I wrote it for you vegetarian friends.You can try it at home and post your experiences at home.Awaiting to hear it :)

Ingredients:


For Filling:


Non Vegetarian Dish

  • 1/2 Boneless Chicken or Chicken breast. cut into cubes
  •  1 Big onion chopped finely or minced
  • 2 Tablespoons Vegetable oil or Olive oil or Canola oil.
  • Salt to taste
  • 1 Tsp Freshly ground pepper
  • 4 to 6 Green chillies finely chopped.(Optional)
  • 1/4 cup Raisins
  • 1/4 cup Cashew nuts (optional)
  • 1 medium Potato diced..
  • 1 Tablespoon minced Garlic.
  • 1/2 piece Maggi Chicken cube (Available in  Grocers store) 
  •  1/2 cup  Chicken Stock or Water
Vegetarian Dish

  • Frozen Mixed vegetables (Thawed) or
    Fresh 1 cup carrots diced, 1/2 cup fresh green peas,1/2 cup corn,1/4 cup French Beans chopped.
  • 1 medium Potato diced.or vegetables of your choice.
  •  1 Big onion chopped finely or minced
  • 2 Tablespoons Vegetable oil or Olive oil or Canola oil.
  • Salt to taste
  • 1 Tsp Freshly ground pepper
  • 1/2 tsp Chilli powder(optional) or depends for your spiciness
  • 4 to 6 Green chillies finely chopped.(Optional)
  • 1/4 cup Raisins
  • 1/4 cup Cashew nuts (optional)
  • .1/2 cup Vegetable stock.
  • 1 Tablespoon minced Garlic.(optional)
Crust :You can use it below or you can buy thawed Puff pastry sheets(1 sheet) or depends.

Homemade Crust
  • 3 cups All Purpose Flour or Maida
  • 1/4 cup  Sugar
  • 1/3 cup water, cold
  • 1 cup cold butter.No melting please.
  • 1/2 tsp baking powder
  • 1/2 tsp salt
Optional for brushing the top of the crust with the fillings inside:
  •  1 piece raw egg for Non vegetarians.
  • 1/2 cup Melted Butter for Vegetarians
Method :

  1. For cooking the filling:(Non Vegetarian)
  • Take a wide deep bottomed pan,add oil and allow to heat 
  • Saute the onions,garlic till it turns light brown
  • Add green chillies,chicken,potato.Allow it to boil till it gets tender after adding chicken stock or water
  • Once the chicken is tender,add salt and pepper and chicken cube piece
  • Allow it to cook for about 2 minutes,add raisins,cashew nuts and mix well
  • Garnish it with chopped coriander(cilantro) leaves.
  • Make sure it should not have liquid texture.Drain off the excess liquid and set aside.
  • 2.For cooking the filling:(Vegetarian)
  • Take a wide deep bottomed pan,add oil and allow to heat 
  • Saute the onions,garlic till it turns light brown
  • Add green chillies,all mixed vegetables.Allow it to boil till it gets cooked after adding  water
  • Once the vegetables are well cooked ,add salt,chilli powder and pepper.
  • Allow it to cook for about 2 minutes,add raisins,cashew nuts and mix well
  • Garnish it with chopped coriander(cilantro) leaves.
  • Make sure it should not have liquid texture.Drain off the excess liquid and set aside.
For making the Dough:

  •  In a wide bowl,Sift the flour,salt ,baking powder into the bowl.Add sugar.
  • Chop small cubes of butter.(It should be solid and cold)
  • Put the cubed butter into the dry ingredient mixture
  • Add water gradually and mix all the dry ingredients thoroughly  until form into a dough.
  • Divide the dough into halves.
  • Keep one half into the bowl and cover it with damp cloth or wet tissue towel to avoid dry.
  • Remaining half of the dough ball.Make into small balls.
  • Flatten the dough into round shaped like poori shaped size.
  • Place the 1/2 to 1 Tablespoon filling(Vegetarian or Non Veg) onto the center of the flattened dough
  • Fold the dough so that the opposite ends meet ( a half moon shaped dough)then press the edges and seal it.
  • Preheat the oven to 350 F Line a parchment paper on the baking sheet and Set aside.
  • In a bowl separate the egg whites from yolks. Add 1 Tsp water to the egg whites and beat. or else beat the whole egg lightly and keep aside.(For Non Vegetarian)
  • Place the filling shaped doughs on the baking sheet apart from the space about 1 inch.
  •  Brush it with egg wash on the top of the shaped doughs.(For  Non Veg)
  •  Brush it with melted butter on the top of the shaped doughs.(For Veg)
Bake it for  about 20 to 25 minutes or varies depends on the oven temperature or keep an eye watch.till get golden or light brown on the top of the empanadas.


Remove from the oven
.

Serve hot with Tomato ketch up or mint chutney.

Plantain Fritters Yummy Snack :)

Hi friends 

Today I had a nice weekend busy baked special treats for my dearest dad and posted it on my Facebook...Well I am sending posts day by day :) Also happy that my guest post was hosted by Lavanya from Tickle Your Taste buds and make your life delicious on a very special day that is on Happy Father's Day :) :)double happiness :) 
Well Am sending this recipe on very special Kerala style Plantain Fritters as We are from our God's own country settled down in Chennai .This recipe is our favorite tea time snack with my family.Last year recently I was on trip to Kerala with my parents,my mariner brother my in laws,my hubby and my cutie daughter.We all went for relaxing moment in our life that is an amazing attraction "HOUSE BOAT" in Alleppey. Enjoyed lots.This stuck my mind what is the last dessert we get it from our cook in Houseboat.Yummyyyyyyyyyyyyyyyyyyyyyyyyyy Wowwwwwwwwwwwwww Crispy Hot Plantain Fritters along with Tea :) Loved it lots and my entire family had enjoyed lots.What A Wonderful Memories at Kerala!!! Want to make it for my dad.Here it is  the recipe and make it at home Enjoy it along with a cup of Chai(Tea) and make life memorable  :)


An Amazing House Boat :)


Well here is the recipe from our God's own country an evening snack time :) :)

Recipe Source from my mom :)

Ingredients:
  • 1 cup Maida or All Purpose Flour
  • 1 Tsp to 1 Tablespoon Sugar (It depends to taste)
  • 1/2 Tsp Baking Soda.
  • 2 ripen Plantain ( If the outer skin is black then its very ripe.)Slice it.
  • A pinch of turmeric powder 
  • 1 Tsp Jeerakam or cumin seeds
  • 1/2 Tsp Crushed Cardamom or cardamom powder
  • A pinch of salt.
  • 3/4 cup water less or more.
  • Coconut oil for frying. (You can use Vegetable or Canola oil.)
Method:

  • Take a wide bowl,Sift the flour,baking soda,salt  into the bowl.
  • Add sugar,jeerakam,cardamom powder or crushed cardamom,turmeric powder to it and whisk till it is well combined together.
  • Adjust by pouring the 1/2 cup water into it to get the right consistency not too thin not too thick. .
  • slice the plantains vertically or cut the plantain into halves then slice each half  in the middle vertically 
  • Dip the sliced plantain into the batter
  • In a wide kadai or frying pan,pour the oil into it.Once the oil is hot,take a drop of batter into it and check whether its bubbly hot and does not sink to the bottom..then its ready.
  • Put the plantain slices coated with batter into the frying pan or kadai and fry till golden brown
  • Drain it  on paper napkins
  • Serve warm along with hot Tea ;)

Apple Mini cupcake with an aromatic cardamom apple frosting

Hi friends!!! I was sitting idle thinking of something else for baking.I want to do something that will make cupcake cutest.:) I got an idea of making mini cupcakes.Aw so cute by baking and frosting mini cupcakes.It will be very delightful for kids :) I made an Egg-less Apple mini cupcake with cardamom grated apple butter cream :)

Its my own idea and made my own recipe for this post.U can try it at home and give to your family and friends :) 

Here it is :)



Ingredients:

  • 1/4 cup Unsalted Butter(Room Temperature)
  • 3/4  cup Sweetened Condensed milk
  •  1 cup All purpose  flour
  • 3 Tablespoons Sugar
  • 1 1 /2 Tsp baking powder
  • 1/2 Tsp Baking soda
  • 1 Tsp Vanilla extract
  • 1/4 cup milk 
  • 1 cup Apple finely chopped


Method:


Preheat the oven to 350 F or 180 C. Line the mini muffin liners into the mini muffin pan and set aside.


Using an electric mixer or hand mixer,beat the butter and sugar until creamy and smooth,Add the condensed milk.Sift the flour,baking soda and baking powder and add to the wet mixture until its well combined.Add milk and vanilla extract and stir it well,Fold the chopped apples into the batter and its well combined.


Evenly pour the batter atleast 1 tablespoon into each and every liner of the mini muffin pan and allow to bake it for about 10 to 12 minutes or just until the toothpick comes out clean.Do not over bake.


Remove from the oven and allow to cool on the cooling rack before frosting.




Butter Cream Frosting :


Ingredients

  • 2 cups powdered or icing sugar
  • 1/2 cup unsalted butter(room temperature)
  • 1 Tsp vanilla extract
  • 1/2 Tsp to 1 Tsp Cardamom powder( crushed and coarse) (If you feel the flavor is there then OK otherwise increase the quantity)
  • 2 Tablespoons milk or light cream 
  • 1/4 to 2/3 cup Grated Apple.
Method:


Using an electric mixer or hand mixer,beat the butter until smooth,add vanilla extract and gradually add the sugar until its well combined.Add milk or cream,cardamom powder and beat gently until the frosting is light and fluffy for about 3 to 5 minutes.Scrap down the sides as needed.Fold the grated apple until it is well combined.

Put into the piping bag with  a star tip and decorate onto the cupcake and garnish  it with chopped apple.

Rainbow Fruit Cake :)

Well I am posting my special recipe as Rainbow Fruit Cake  because it has struck my mind and I was thinking about natural colors than artificial colors for adding Rainbow cake.So decided to make wonderful healthy cake which has 7 fruits :) It added the wonderful colors to the life!!!! :)
Here are the VIBGYOR colors for the rainbow cake  of added fruits done by me are  as

FRUITS

V- Violet- Grapes
I-  Indigo- Blackberries or Plum
B- Blue- Blueberries
G-Green-Avocado
Y-Yellow-Mango
O-Orange- Orange
R-Red- Strawberries

Well the ingredients are as below..Enjoy  :)

Ingredients:

1.Fruits of given photo. Finely chopped into pieces.

2. For Cake:

  • 1/2 cup Unsalted Butter(Room Temperature)
  • 1 cup sugar
  • 2 Eggs
  •  1 cup All purpose  flour
  • 1/4 Tsp salt
  • 1 /2 Tsp baking powder*(If you don't want to add baking soda, then add 1 tsp baking powder)
  • 1/2 Tsp Baking soda(Optional)
  • 1 Tsp Vanilla extract
  • 1/2 cup milk (if u want to make the cake  soft or else add 2 Tablespoon milk to it ) 
  • Extra 1/4 cup All purpose flour for coating the fruits 
Method:

Preheat the oven to 350 F or 180 C. Grease butter or baking spray and dust it with flour or place parchment paper sized  on the cake pan about 8 inches and set aside.


Using an electric mixer or hand mixer,beat the butter and sugar until creamy and smooth,Add the eggs one by one at a time.Sift the flour,salt and baking powder and add to the wet mixture until its well combined.Add milk and vanilla extract and stir it well. Finally added the floured coated fruits to it and mix well until its well covered.


Pour the batter into the cake pan and allow to bake it for about 20 to 25 minutes or just until the toothpick comes out clean.Do not over bake.


Remove from the oven and allow to cool on the cooling rack.



Serve it with a dollop of whipped cream or garnish it with fresh fruits on the top.

Mango Cupcakes with double Realfruits frosting

Mango Cupcake made with Real fruits on the top :

  Mango season has started!!!! Its Summer time!!!!! :) Very Hot climate!!!Finally got mangoes at my home and was wondering what will I do with mangoes? Got an idea as it will be very good and healthy for kids.Thought of making mango cupcake with real fruits on the top.Its such as TRIPLE FRUITS for this post as I made mango cupcake with blueberry preserves and strawberry preserves mixed into the butter cream :) Here it is!

Ingredients:


  • 1/2 cup Unsalted Butter(Room Temperature)
  • 3/4  cup sugar
  • 2 Eggs
  •  1 cup All purpose  flour
  • 1/4 Tsp salt
  • 1 /2 Tsp baking powder*(If you don't want to add baking soda, then add 1 tsp baking powder)
  • 1/2 Tsp Baking soda(Optional)
  • 1 Tsp Vanilla extract
  • 1/2 cup Mango puree(Made with real mangoes at home) 
  • For Mango puree : Very ripe mangoes can be very juicy.Slice it and take out the mango and blend into the mixie with 1 Tablespoon sugar if needed.) 


Method:


Preheat the oven to 350 F or 180 C. Line the muffin liners into the muffin pan and set aside.


Using an electric mixer or hand mixer,beat the butter and sugar until creamy and smooth,Add the eggs one by one at a time.Sift the flour,salt and baking powder and/ or baking soda and add to the wet mixture until its well combined.Add mango puree and vanilla extract and stir it well.


Evenly pour the batter into each and every liner of the muffin pan and allow to bake it for about 17 to 20 minutes or just until the toothpick comes out clean.Do not over bake.


Remove from the oven and allow to cool on the cooling rack before frosting.




Butter Cream Frosting :


Ingredients

  • 2 cups powdered or icing sugar
  • 1/2 cup unsalted butter(room temperature)
  • 1 Tsp vanilla extract
  • 2 Tablespoons milk or light cream 
For making Blueberry preserves:

  • 1/4 cup Fresh blueberries washed and grind it into the mixie to get coarse for 15 seconds. Keep aside.
  • Add sugar if needed.
  • You can buy store bought blueberry preserves

For making Strawberry preserves:

  • 1/4 cup Fresh Strawberries washed and grind it into the mixie to get coarse for 15 seconds. Keep aside.
  • Add sugar if needed.keep leftover strawberry cubes chopped into pieces.
  • You can buy store bought Strawberry preserves





Method:



Using an electric mixer or hand mixer,beat the butter until smooth,add vanilla extract and gradually add the sugar until its well combined.Add milk or cream and beat gently until the frosting is light and fluffy for about 3 to 5 minutes.Scrap down the sides as needed.
Divide half of the butter cream into 2 separate bowls.
Add 2 Tablespoons or varies depends on your likings blueberries preserves into 1 bowl and mix well.
Add  2 Tablespoons or varies depends on your liking strawberries preserves into another bowl and mix well.


Take the  1st half  of blueberry frosting into one side of the piping bag and take another half of strawberry frosting into the other side of the same piping bag with a Star tip or without tip and decorate it on the cupcake.Garnish it with real fruits on the top if needed.I just added my homemade royal flowers on the top of the cupcake.You can do it with any color of your choice as an optional.
Try it at home and give it to your family and friends!! Its all made with real fruits just homemade flavors!!! Am very sure your family will be liking this cupcake!!! Awaiting to hear your comments and your experiences on making this recipe.
