Mango Cupcakes with double Realfruits frosting

Mango Cupcake made with Real fruits on the top :

  Mango season has started!!!! Its Summer time!!!!! :) Very Hot climate!!!Finally got mangoes at my home and was wondering what will I do with mangoes? Got an idea as it will be very good and healthy for kids.Thought of making mango cupcake with real fruits on the top.Its such as TRIPLE FRUITS for this post as I made mango cupcake with blueberry preserves and strawberry preserves mixed into the butter cream :) Here it is!

Ingredients:


  • 1/2 cup Unsalted Butter(Room Temperature)
  • 3/4  cup sugar
  • 2 Eggs
  •  1 cup All purpose  flour
  • 1/4 Tsp salt
  • 1 /2 Tsp baking powder*(If you don't want to add baking soda, then add 1 tsp baking powder)
  • 1/2 Tsp Baking soda(Optional)
  • 1 Tsp Vanilla extract
  • 1/2 cup Mango puree(Made with real mangoes at home) 
  • For Mango puree : Very ripe mangoes can be very juicy.Slice it and take out the mango and blend into the mixie with 1 Tablespoon sugar if needed.) 


Method:


Preheat the oven to 350 F or 180 C. Line the muffin liners into the muffin pan and set aside.


Using an electric mixer or hand mixer,beat the butter and sugar until creamy and smooth,Add the eggs one by one at a time.Sift the flour,salt and baking powder and/ or baking soda and add to the wet mixture until its well combined.Add mango puree and vanilla extract and stir it well.


Evenly pour the batter into each and every liner of the muffin pan and allow to bake it for about 17 to 20 minutes or just until the toothpick comes out clean.Do not over bake.


Remove from the oven and allow to cool on the cooling rack before frosting.




Butter Cream Frosting :


Ingredients

  • 2 cups powdered or icing sugar
  • 1/2 cup unsalted butter(room temperature)
  • 1 Tsp vanilla extract
  • 2 Tablespoons milk or light cream 
For making Blueberry preserves:

  • 1/4 cup Fresh blueberries washed and grind it into the mixie to get coarse for 15 seconds. Keep aside.
  • Add sugar if needed.
  • You can buy store bought blueberry preserves

For making Strawberry preserves:

  • 1/4 cup Fresh Strawberries washed and grind it into the mixie to get coarse for 15 seconds. Keep aside.
  • Add sugar if needed.keep leftover strawberry cubes chopped into pieces.
  • You can buy store bought Strawberry preserves





Method:



Using an electric mixer or hand mixer,beat the butter until smooth,add vanilla extract and gradually add the sugar until its well combined.Add milk or cream and beat gently until the frosting is light and fluffy for about 3 to 5 minutes.Scrap down the sides as needed.
Divide half of the butter cream into 2 separate bowls.
Add 2 Tablespoons or varies depends on your likings blueberries preserves into 1 bowl and mix well.
Add  2 Tablespoons or varies depends on your liking strawberries preserves into another bowl and mix well.


Take the  1st half  of blueberry frosting into one side of the piping bag and take another half of strawberry frosting into the other side of the same piping bag with a Star tip or without tip and decorate it on the cupcake.Garnish it with real fruits on the top if needed.I just added my homemade royal flowers on the top of the cupcake.You can do it with any color of your choice as an optional.
Try it at home and give it to your family and friends!! Its all made with real fruits just homemade flavors!!! Am very sure your family will be liking this cupcake!!! Awaiting to hear your comments and your experiences on making this recipe.
