CornFlakes Cookies - Baking Partners # 2

Dear Friends

Last month We(Baking Partners) posted Chocolate Almond Cake on the eve of Julia's Birthday as an Tribute:) It was awesome fun and loved to be part of it. Here it is the cookie selection theme for this month which is all time favorite :) It has 3 types of cookies given by Baking Partners group.I was selected the corn flakes cookies because my daughter loves it.

We enjoyed baking and it came out well. Everyone loves that cookie because it gives an aromatic flavor of coconut and of course crunchy,crispier corn flakes :) Heart felt thanks to Priya and Swathi for this awesome cookie recipe and best selection :) 

Here is the recipe as below. Enjoy it with your favorite cup of Tea or Milk :)

Recipe Adapted Cornflakes cookies from Baking: Commonsense guide by Mudroch Books


Ingredients

  • 125 gms/10Tbsp Unsalted butter
  •  3/4 cup/165gms Sugar
  • 2 Eggs (lightly beaten)
  • 1 tsp Vanilla extract
  • 2 Tbsp Black raisins
  • 1 1/2 cups Dessicated coconut
  • 1/2 Tsp Baking soda
  • 1/2 Tsp Baking Powder
  • 2 Cups All purpose flour
  • 2 Cups Crushed Cornflakes

Method:

 1. Preheat the oven to 350F, line two baking trays with baking paper.Sieve the flour with baking soda and baking powder.

2. Cream the butter and sugar in a bowl, using electric beaters until they turn light and fluffy.

3. Gradually add the egg, beating thoroughly after each addition then add the vanilla and beat until combined.

4. Now add the raisins,coconut, give a stir. Fold the flour mixture with a metal spoon and stir until the mixture is almost smooth.

5. Put the crushed cornflakes in a shallow dish, then drop tablespoon of this cookie mixture onto the cornflakes and roll into balls.

6. Arrange on the trays, bake for 15 to 20 minutes or until they turn golden.

7. Cool completely and arrange in an air tight box. 



Notes: I have reduced to make it the half of the measurements.

Everyday Yogurt Cake :)

Dear Friends :)

Why I am happy is because I made this cake for my brother's birthday.It was so soft,moist and of course very very light in texture and an awesome taste.When my daughter sliced the cake,i saw lots of pores and air holes inside the cake as it is very important to this which will make lighter cake.No butter It is nice one.I had tried this recipe for Bake Along Challenge.It was my 1st attempt to try out this one.It was an airy and loved that taste.It was enjoyed by my family and my friends :)  Am happy that Bake Along challenge did perfect selection on this month and heart felt thanks to everyone:)
Bake Along Challenge is twice a month bloghop, hosted by Joyce from Kitchen Flavours, Lena from Frozen Wings and Zoe from Bake for Happy Kids.

Here well goes the recipe adapted from Cake Keeper's Cake" by Lauren Chattman. I have halved the measurements  and you can make the same measurements as you like from here.

Here is the ingredients as below as I have halved because it is my 1st attempt.It came out perfect and i made it again one more time.I baked 2 round ones.:) :) You can make the same as recipe adapted from here :)



Ingredients:

DRY INGREDIENTS :
  • 1 cup All Purpose Flour
  • 1/2 Tsp Baking powder
  • 1/4 Tsp Baking Soda
  • 1/4 Tsp Salt
WET INGREDIENTS:
  • 1 Egg
  • 1/2 cup  Curd( I made homemade curd) Not sour at all.
  •  1 Tsp Vanilla Extract
  • 1/2 to 3/4 cup Sugar or depends on curd if its sour, adjust the sugar to it
  • 3 Tablespoons Vegetable Oil.(I used it.)

Method:

Here is the image as shown step by step.
  •  Preheat the oven to 350 F or 180 C
  • Grease the bottom and sides of  an 8 inch round cake pan with oil and dust it with flour. Keep aside.
  • Sift the flour,baking powder,baking soda into another bowl.Add salt to it.
  • Take a wide bowl,Beat the curd and sugar until its well combined to avoid any lumps.
  • Add egg to it and beat it with spatula or whisker. 
  • Add oil and vanilla extract to it.
  • Add the sifted flour by adding one by one in three additions.
  • Once it is well incorporated by using spatula while being folded gently.
  • Transfer to the greased cake pan.
  • Tap the cake pan gently to avoid any bubbles formed.
  • Bake it for about 30 to 35 minutes or until the cake is golden brown in color once the tooth pick comes out clean.
  • Allow it to cool.
  • Garnish it with Powdered sugar or fruits of your choice.(I used stencil and I made it :) )
  • Enjoy it 
Notes : Store uneaten cake in a cake keeper or wrap in plastic and store at room temperature for up to 2 days.

Peach Crisp

Dear Friends

It was long weekend here and I got bored of sitting at home.Want to go out somewhere. MY hubby took me to big farmer's market where all fresh fruits and vegetables are kept.I love to pick mostly that is fruits :) I saw lots and lots of peaches and was wondering as we never tasted it :( I asked my hubby we will try for it.We loved it after slicing it. So sweet and tasty. I want to make something different :)It is popular baking dish called PEACH COBBLER.I want to try something different. Wow got it its same like Peach cobbler but slightly different. I got finally found one of my favorite Chef.Go for the recipe adapted from here
I made some changes as I did followed and reduced to half of the measurements.You can follow the full measurements :)



Ingredients:

To make the Filling :(WET INGREDIENTS)
  • 3 Peaches Ripe one.Cut into bite size chunks.
  • 3 Tablespoons Brown sugar
  • 1 Tablespoon Sugar
  • 1 1/2 Tablespoon all purpose flour
  • 1/4 Tsp Vanilla extract
  • 1 Lemon Zest 
  • 3 Tablespoons juice  from lemon
  • 1/4 cup Golden raisins or Black currants (I used black raisins)
  • A Pinch of salt.
To make the Topping :(DRY INGREDIENTS)
  • 2/3 Cup All purpose Flour
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • A pinch of salt
  • 2 Tablespoons unsalted butter cold and no melting please.
  •  1/4 cup sliced almonds
  • 1/4 cup rolled oats
  • 1 1/2 Tablespoons Peach fruit juice extract from peaches or Cold Water.
 Method:
Here is the step by  step wise as follows




  1. Under Wet ingredients,Mix everything one by one to make the filling.Keep aside.
  2. Preheat the oven to 350 F or 180 C.Line a baking sheet with parchment paper or aluminum foil
  3. Take a food processor or using pastry blender or mixie with pulse button,Put all the dry ingredients to make coarse without adding water/peach fruit extract..It should be like more crumbs.
  4. Transfer to the bowl by adding 1 tablespoon water/peach fruit extract till you get the mixture crumble and not sticky.
  5. Take ramekins,Place the filling to it. 
  6. Place the crumbled mixture on it .Allow it to sprinkle..
  7. Bake it for about 20 to 25 minutes or until the topping is light brown.
  8. Allow it to cool or warm.
  9. Serve it with a dollop of ice cream of your choice.
  10. Enjoy :)
Notes:I didn't use ice cream on my ramekins because here the weather is very cold and rainy :)you can add :)

Colorful Swirl Cookies :) A great cookie for Kids.

Dear Friends

Am trying out to do different shapes or colors for cookies! My daughter loves cookies and I am looking for a different one.If your kids or friends got bored of eating plain simple cookie?Then go for this  and I made a combination of chocolate and vanilla  swirl cookies coated with colorful sugars :) Here is the picture as I made it for my 1st attempt :) Am sure kids will love it and it ll be very great to carry out for any celebration or treats especially Christmas.So cute design :)Isn't it?

Here is the recipe as follows

Ingredients:

  • 1/2 Cup(1 Stick) Unsalted Butter(Room Temperature)
  • 3/4 Cup sugar
  • 1 Egg
  • 2 Cups All purpose flour
  • 1/2 Tsp Baking powder
  • 1/4 Tsp Salt
  • 1/2 Tsp Vanilla Extract
  • 1 Ounce Semi sweet chocolate bars or 1 Tablespoon Cocoa powder
  • 2 Tablespoons Milk.
For coating the dough:

Use sprinkles colored sugars from Local stores or any sprinkles of desired shapes.
Method:

 Here is the picture shown as step by step wise 

  • Using an Electric stand mixer or hand mixer Take a wide bowl,Add the butter and sugar into the bowl and beat it until it is  fluffy.Add 1 egg at a time.Mix well.Add vanilla extract and scrape down all the sides by using spatula
  • Sift the flour,baking powder and salt to another bowl.Keep aside.
  • Add the flour on to the wet mixture and mix well until it is well incorporated.
  • Add 1 Tablespoon Milk to it.
  • Make sure that the dough should not be more sticky.
  • If you feel the dough is sticky add little flour and make a pitiable smooth dough as shown in the pic.
  • Divide the dough into halves.
  • Add Cocoa powder along with 1 Tablespoon Warm milk to it.Pour it little till you get chocolatey covered dough.If you still find the chocolate dough sticky then add flour to it.
  • If you are using chocolate bars ,take a small microwave proof bowl,Put the chocolate pieces with 1 tablespoon milk to it.Let it melt into the oven for about 30 seconds.Once it is cooled and completely melt.Add to the white batter and knead it till you get smooth chocolate cookie dough.
  • Let the 2 doughs be wrapped by using plastic wrap and set it to the fridge for about 30 minutes or it is firm
  • Once 30 minutes has been elapsed.Take  2 sheets of wax paper,Place the wax paper sheet on the work surface.
  • Place the white dough onto it.
  • Then cover it with another wax paper sheet on the top of the dough.
  • Take a rolling pin make it flatten about 1/4 inch.at least rectangular shaped
  • Similarly follow the same for chocolate dough.
  • Once you flatten both the doughs.Both the doughs should be exact of the same size.
  • Allow it to freeze for about 15 minutes.
  • Take out both doughs from the freezer,place the white dough on the work surface.Remove the wax paper on the top.
  • Apply the water very little  on the white dough evenly by using pastry brush to help the chocolate dough to stick together. 
  • Take out the chocolate dough  and remove the bottom of the wax paper carefully.
  • Place the chocolate dough on the white dough by removing the top of the wax paper of the chocolate dough carefully.
  • Place it both the doughs of the same size.
  • Roll it tightly with the help of the wax paper lying on the  bottom of the white dough as earlier.
  • Cut out the sides of the dough
  • Wrap it well and set it to the refrigerator for about 2 hours or freezer for about 1 hour.
MY METHOD :
  • If you are planning to follow the same as I did for added colors to the cookie dough.
  • Cut the cookie roll into 3 as same as size.
  • Wrap the 2 remaining cookie rolls and set back to the freezer for few minutes while you are making 1st batch. 
  • Preheat the oven to 350 F or 180 C
  • Line a baking sheet using parchment paper.
  • place the sprinkles colored sugar on the wax paper of your choice on colored sugars.
  • Take 1 cookie roll,Brush it with water and allow it to roll on the sugared colors on the wax paper.
  • Slice it as shown in the picture.
  • Bake it for about 10 minutes.
  • Once the cookie is firm.Allow it to cool on the cooling rack.It ll be hard as like cookie.
  • Do the remaining 2 batches of  cookie rolls for adding 2 more colors to it.as shown in the picture.
AN ALTERNATIVE METHOD:
  • IF you want only one colored sugar,then take out the whole cookie rolls,Brush it with water gently.
  • Spread the colored sugar of your choice on the wax paper
  • Place the whole cookie roll without cutting.Roll it with sprinkles colored sugar evenly.
  • Slice it.
  •  Place it on the baking sheet and set to the oven for about 10 minutes.
  • Allow it to cool on the cooling rack.
  • Serve it 
  • Store it in an airtight container.
  • Enjoy it with colored swirl cookies :)

Round Up Of August Month- Know Your Natural Sweetness - Jaggery & an Awards

Dear Friends

Am very much thankful to Jagruti of Jagruti's Cooking Odyssey who has given her host series to everyone and I was selected my 1st event.I am really excited on my 1st host event and getting new friends and their recipes :) I had really enjoyed seeing all the wonderful entries as far as I had received very delicious 36 entries.It was very lovely experience and helped me to gain confidence in building up together and exciting to see more and more entries and love to talk to friends, post my comments on their entries and lovely time together :) Am very much thankful to all friends who had submitted their entries and I am happy to have such a very wonderful friends who loves to share,post comments and their efforts on blogging events.Am waiting to see more and more entries from you all for my ongoing and future events :)

Raisins Bread Pudding

Dear Friends

Sorry to tell you everyone as my laptop got fully damaged as Am waiting for it to fix it up.Please bear it with me.Am sorry for the much delay to comment and missed out events.Hoping to get everything soon in a fix!

Let's talk about my new post on Bread Pudding !!! I was being bored of eating simple bread with jam and keeps on staring it. I want to try out something different for my more and more bread lying down on it. I came to know that bread pudding is widely popular dessert in the world wide countries especially South USA,Europe,South America,Asia Pacific,Canada and Mexico.Wowwwwwwwwww I tried it and It came out Awesome and almost full.It can be eaten at Breakfast or Dinner.

A Bread pudding is bread based dessert usually from stale bread and combination of milk,sugar, eggs or syrup and spices can be added such as cinnamon,nutmeg,cardamom,vanilla and dried fruit nuts. It can be also adding rum or caramel sauce or any sweet sauce on it.I didn't add rum to it. :)

Well Here is my recipe goes on below

Ingredients:

  • 8 to 12 slices of bread  or your choice as I didn't use stale one.If u have stale ones or leftover bread slices  then you can use it.
  • 1/2 cup Milk
  • 1 Egg (Replaced with 1/2 cup Condensed milk)
  • 1/4 cup to 1/2 cup sugar (You can use brown sugar or white sugar)
  • 1/4 Tsp Nutmeg Powder or Grounded Cinnamon
  • A pinch of Cardamom Powder (Optional)
  • A Handful of Raisins or 1/4 cup of Black Raisins(Currants)
  • 1/2 Tsp Vanilla Extract or your favorite extract 
Method:

Please see the picture as given Follow it accordingly.

  • Preheat the oven to 350 F or 180 C.
  • Tear the bread into bite sized pieces and put it into the Baking Pan(13*9 )inch or any pan.
  • Mix all the ingredients given and whisk it well.
  • Pour the egg vanilla mixture along with your favorite spices and add raisins into the bread and allow it to soak for about 1 to 1 1/2 hours or until it is fully soaked.
  • Take a sauce pan,pour the water and allow it to boil till it reaches a boiling range.
  • If you have extra pan little bigger than your baking pan soaked bread mixture.
  • Place a bigger pan or aluminum rectangle foil pan or any size bigger than your baking pan.
  • Pour hot water to it 
  • Place the bread mixture baking pan on the water bath.
  • Please check that the water level should be 2/3 rd half to the baking pan of all the sides as shown in the picture.
  • Allow to to bake for about 20 minutes or  until it is light brown and completely cooked.
  • Allow it to cool or warm
  • Slice it and serve it.
  • Can garnish it with powdered sugar or whipped cream or any fruits such as strawberries or banana slices or any syrup such as maple syrup or caramel sauce.

Announcing my favorite event called an International Celebration - U.S.A.
I am excited to post my 2nd event of 2 dishes one for baking or dessert or both for the U.S.A Celebration on September month
 This event is owned by Jagruti of Jagrutis Cooking Odyssey. Am very happy for choosing the right event on the theme U.S.A. as the USAs traditional cuisine uses indigenous ingredients such as sweet potatoes, corn, pumpkin and maple syrup. Chocolate Chips cookies are widely popular in the U.S. Based on there traditional desserts and holidaying /Celebration such as an Independence day, Labor Day, Halloween, St.Patrick's Day, Thanksgiving Day and Worldwide Christmas.please bake any goodies as traditional cakes, cupcakes, pies and cookies Or desserts

Thanks a tons to Jagruti Madam for letting me to host this event and I am very lucky for this.

Coming to the theme of this event, you can bake any goodies or make a dessert or both.
We shall give you an online award for the Most Contributor Award, Best Innovative Award, Best Traditional Award, Best New Dish Award and a Participation Award.
