My 1st Attempt Pumpkin Carving for Halloween Day :)

Dear Friends

On the previous day before Halloween arrives, As for the 1st time celebration for Halloween I want to make something new,decorative things and want to try it on my own.I got pumpkin and carved it for almost 3 hours and it was so fun and making me to carve very very patiently.and finally placed LED light on it and It is glowing beautifully and bright inside the pumpkin when lights are switched off and it got scary BOO Whoa it is the Witch sitting on the flying broom :)!!!! :) Also made pumpkin muffins you can see the recipe adapted from here I was excited to see on Halloween day as my kid wore Witch Costume on Halloween day at her school.It was great and overwhelming experience. At her school they allowed it to make crafts along with kids such as photo frame or mask related to Halloween.It was fun and she enjoyed visited my friends 's home for treat or trick .She has got lots of candies and she enjoyed it well. We made it amazing today and went well as my kid said Thank you for costume and wonderful treat and also nice carving :) It was so memorable :) Here it is :)

Eggless Butter Cake with Sliced apples and Crunchy topping :)

Boo!!! Happy Halloween Day :) Am sorry for the much delay for not posting my recipe for Eggless  baking Challenge  Group # 2 by gayathri. My kid is so happy by wearing Witch costume and my carved pumpkin witch  :)It is so fun. Am so happy as my kid is happy :) I am trying to use eggless recipes as i have tried  some and it came out well by using homemade curd.It adds to the taste and good for vegan peoples :)



It was Butter Cake selected by gayathri and It was awesome,simple,buttery flavor and an aromatic smell of cinnamon to it  :)  Here is the recipe as I made few changes as I reduced from 3 eggs to 1 egg and substitute with curd and baking soda. It was taste.I want to add fruit to it :) because apple gives best combination along with cinnamon and raisins :)

Preparation Time-30 minutes
Cooking Time-15-20 minutes
Oven Temp-170C / 325F

Ingredients:
Butter-2/3 cup / 160gm
Caster Sugar-1/2 cup / 115gm
Eggs-3 large
All Purpose Flour-1 2/3 cups / 210 gm
Baking Powder-2 tsp
Sultanas/ Golden Raisins-1/2 cup / 60 gm
Milk-1 tbs
For Topping :
Light Brown Sugar- 2 tbs
Cinnamon-1/ tsp

Note : I have made some changes and reduce to half. You can do follow my recipe or above recipe.

Dry Ingredients :

  • 1 cup All purpose Flour
  • 1 Tsp Baking Powder
  • 1/4 Tsp Salt
To Make Butter Cake batter :
  • 1/4 Cup Unsalted Butter( Room Temperature)
  • 1/2 Cup Sugar
  • 1/4 Cup Curd
  • A Pinch of Baking Soda
  • 1/3 Cup Milk
  • 1 Tsp Vanilla Extract
  • 1/2 Cup Sliced Apples 
For Topping
  • 3 Tablespoons Cold Unsalted Butter cut into small cubes
  • 1/4 cup Light Brown sugar
  • 1/2 Tsp Ground Cinnamon
  • 1/2 Cup raisins
Note: For the topping I reduced to half because I used it accordingly for my small fluted mini pan.You can use the same as above if you are using normal 6 or 7 inch round pan.

Method :



  • Line a parchment paper on your choice of round pan or fluted pan or mini pan & muffin cup.
  • Preheat the oven to 325 F 
  • Add all the ingredients given under the Topping. If you prefer add the toppings after the cake is baked.then you take raisins alone  and add to the batter by folding it and bake it.
  • If you prefer the toppings added to the unbaked cake then go for it and bake (Am using that way as you can see the picture as above )
  • Whisk the dry ingredients together.
  • Add baking soda to the curd and mix well.Keep aside.
  • Using an electric mixer or hand mixer,Beat the butter until it is creamy, Add sugar to it until it is well combined.
  • Add curd mixture to it.
  • Add vanilla extract and beat well until it is well incorporated.
  • Add the flour mixture into 3 additions by adding milk little until it is well incorporated.
  • Transfer into the baking pan. Make it even by using an offset spatula.
  • Keep the sliced apples on the top of the butter cake evenly.Or you can omit by adding apples.
  • Sprinkle the topping mixture on the top of the apple slices evenly before baking. If you prefer add the toppings then sprinkle the toppings on the hot butter cake once it is baked.
  • Bake it for about 20 minutes because my pan is small it varies. Normally if using normal pan it ll take around 30 to 35 minutes.or until the tooth pick comes out clean.
  • Allow it to cool on the cooling rack.
  • Serve it warm along with a dollop of icecream  of your choice or whipped cream :)

Pumpkin Chocolate Chip Muffins :)


Dear Friends!!!!

Hope everyone is in mood for Navaratri :) Also Halloween time in the coming 2 weeks :) Well I have been selected Pumpkin Choco chips muffins from 3 Recipes as given by Baking Partners Challenge # 3. It was so fun and amazing being part of baking partners :) This time Pumpkin season has arrived and Fall Season has started too.Most are buying harvest  pumpkin types and collecting fall leaves for their creative crafts and many other things. Many are buying for the costumes like Scary.It is so fun by seeing scary costumes,Skeletons,Witch and many more :) Also never miss Pumpkin "JACK OF O LANTERN :) Well It has chosen Pumpkin recipe and I was doubtful as I never tried like this one.I asked my group friends where do we get pumpkin? :) Hmm I got canned Pumpkin puree as I don't want fall into trap by trying homemade :) To my astonishment,pumpkin puree is made pure from pumpkins.Sure I ll make homemade pumpkin puree as I loved pumpkin puree along with spices mix.It was an aromatic and simply loved it :) I want to decorate muffins as It has no cream on the top of the muffin.So got an idea s I made pictures of scary characters  and my daughter colored it :) It was so lovely time being with my daughter :) While baking,I kept my fingers crossed as it should come out well for me. I immediately tasted it while it is warm and it was awesome :) Loved pumpkin :) MY family had enjoyed it and I  gave it to my friends and got lovely feedback :) Here is the recipe and make your creative decorations on it :)



Ingredients:

Dry Ingredients
    • 1 1/2 cups (195 grams) all purpose flour
    • 1 teaspoon baking soda
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground ginger
    • 1/4 teaspoon ground cloves
    • 1/4 teaspoon freshly ground nutmeg
    • 1/2 teaspoon salt
    Wet Ingredients
    • 1/2 cup (113 grams) unsalted butter, room temperature
    • 1 cup (200 grams) granulated white sugar
    • 2 large eggs
    • 1 teaspoon pure vanilla extract
    • 3/4 cup (180 ml) solid packed, canned pumpkin puree
    • 1 cup (175 grams) semisweet chocolate chips
     
     Method:

  •   Preheat oven to 350 degrees F (177 degrees C). Place rack in the middle of the oven. Line 12 muffin cups with paper liners or spray each cup with a non stick vegetable spray.
    • In a large bowl, sift together the flour, baking soda, ground spices, and salt. 

    • In the bowl of your electric mixer, or with a hand mixer, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract. Scrape down the sides of the bowl. 
    • With the mixer on low speed, alternately add the flour mixture and pumpkin puree, in three additions, beginning and ending with the flour mixture. Fold in the chocolate chips.  
    • Fill the muffin cups evenly with the batter using two spoons or an ice cream scoop. Place in the oven and bake for about 18 - 20 minutes, or until firm to the touch and a toothpick inserted in the center of one of the muffins comes out clean. Place on a wire rack to cool.

Chocolate Wacky Cake :)

Dear Friends :)

I still didn't get laptop.Still waiting to get it on November :( I was being interested in joining Blog Hop. It was started by my dear blogger friend Radhika from Tickling Palates. She has an amazing recipes and loved it :) :) Happy to be a part of Blog Hop :) It sounds fun and seeing new friends again and again :) Hopping into another blog,selecting any recipe from partner's blog.It was fun.I was being selected with my partner Vidhya by Radhika.It sounds new and 1st time to join Blog Hop :) and It was amazing and lovely :) I got time to look for my partner Vidhya and visited her blog.I almost visited all her pages especially in cakes,cookies and breads because my blog is only baked goodies :) :) I went through her site and it was amazing.I choose Wacky cake and was wondering why is it called the "Depression Cake" She said in a note which has no butter and eggs.Wow its challenging for me,I would like to try it since it has no eggs :). After baked,It is moist cake and very different cake :) It is great for peoples who does not like to put eggs on it :) :)

Well I can tell you Why is it called Wacky Cake  as I read it from one book named America's Best Lost Recipes.It said During both world wars,it was short in supply leading American women to  devise a variety of "make- do"cakes like this one.Still could not understand,An American women made this strange cake which has dry ingredients mixed together along with 3 holes one is large with oil and other 2 smaller ones with extract and vinegar separately.It is all mixed up gently with wooden spoon.It should not be over mix. It is so soft and moist cake. Thank you Vidhya :)



Ingredients:

DRY INGREDIENTS :
  • 1 1/2 cups all-purpose flour
  • 1 cup white sugar
  • 1/2 teaspoon salt (optional)
  • 1 teaspoon baking soda
  • 1/4 cup cocoa powder
WET INGREDIENTS :
  • 6 tablespoons vegetable oil
  • 1 tablespoon white vinegar
  • 1 cup water
  • 1 cup chocolate chips (optional) I didn't add.You can add,

Method:

Preheat oven to 350 degrees. 
  •  In a medium mixing bowl, Whisk all the dry ingredients except chocolate chips together .  
  • Grease a 8 inch square pan with oil or baking spray.
  • Add all the dry ingredients to the greased baking pan.Make 3 holes as craters,Large one add oil to it.
  • The other smaller ones add vinegar and vanilla extract separately.
  • Mix gently by adding water with wooden spoon.Do not over mix.
  • Bake it for about 20 minutes.While baking, center of the cake is gooey and wet, add chocolate chips if you want. 
  • Once the tooth pick comes out clean with few crumbs to it.
  • Allow it to cool on the cooling rack.
  • Garnish it with powdered sugar.
  • Serve it :)

Amazing Bourbon Biscuits

Dear Friends

Why I am selected this recipe as It is one of our favorite Indian Biscuit as Me and my brother used to eat it since childhood.Now my daughter is so crazy about this biscuit than any other cream biscuits because its chocolate flavor :) I want to try it out for her.Finally found in Nithu's blog.It is so amazing recipes. I baked it and it is so egg less.MY daughter tasted it and said Nice It looks like Bourbon Biscuit.Before baking it, my kid asked whether to put sugar on the top? HaHaHa she s so intelligent :)I said to her Ya :) She said ok can't wait to taste for it :)  My kid and my friends said very tasty. Pistachio Apricot Orange Biscotti

I am very sorry as my laptop is fully damaged and have to wait for about 2 months to get new one.am using Samsung tab and trying to do one by one.it's hard to use tab for blogging time.I used to go to my friend's home to use her laptop for posting it on my blog and blogging days.Very much upset and sorry for the delay.Also will post round up of my previous event.Please bear it with me. I have joined Egg less Baking group owned by Gayathri. She is wonderful and has lots and lots of yummiest recipes. She also has eggless baking recipes :) Am happy to be a part of Egg less baking group. Here is the September Month challenge called as "PISTACHIO APRICOT ORANGE BISCOTTI" It is an Italian biscuit based baked twice. The biscuits are oblong-shaped,sliced it and place it on the baking tray.Allowed to bake it till golden brown and crunchy through cutting the loaf while it is still hot and fresh from baking in the oven.I already baked Chocolate Almond Biscotti and can be found here.Enjoy :)



Ingredients:
  • 1 cup granulated sugar
  • Zest of 1 medium orange
  • 2 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 stick (4 oz) unsalted butter, at room temperature
  • 1 tsp orange flower water ( I used orange extract as I didn't get orange blossom water)
  • 1 tsp pure vanilla extract
  • 2 large eggs
  • 4 oz (about 1 cup) pistachio nuts
  • 5 oz (about 1 cup) chopped dry apricots
 
Method:
  • Preheat the oven to 350 F. Line a large baking sheet with a parchment paper
  • Rub the sugar and orange zest in a small bowl until the sugar gets moist and aromatic.
  • Sift together the flour, baking powder, and salt into a medium bowl.
  • Beat the butter and the sugar mixture in a medium bowl with an electric mixer until well combined.
  •  Add in the orange extract and vanilla extract. Add the eggs, one at a time, beating well after each addition.
  • On low speed, add the flour mixture and beat until combined. 
  • Stir in the pistachios and chopped apricots with a rubber spatula.
To Assemble:
  • Take out the dough.Dust the flour on the working surface counter top.
  • Place the dough on to the dusted top surface.
  • Make it into oblong shaped log about 12 inches in length and 3 1/2 inches wide.
  • Place the prepared log on the baking sheet.
  • Allow it to bake it for about 20 to 25 minutes  or until the logs are golden brown and firm to the touch.
  • Allow it to cool on the cooling rack.
  • Reduce the oven temperature to 325 F.
  • Transfer the logs to a  chopping board.
  • Cut each log into 1/2 inch slices by using sharp knife or serrated knife.
  • Arrange the slices standing them on their bottoms on the same baking sheet.
  • Allow it to bake again for about 12 minutes or until crisp.
  • Cool completely on the cooling rack.
  • Serve it with your favorite drink :)
Notes: Store it in an air tight container upto 1 week.
