Mango Cupcakes with mango buttercream (Eggless)

Hello Friends


Here I made very unique idea for mother's day as I made mango cupcakes with mango buttercream.It is pure eggless one and no butter for the cupcake batter.I made flower pot attaching all cupcakes to flower shaped.My mom used to make mango cake  as we loved the mangoes lots and it tasted lovely.At the same time for my mom I made this one to cupcakes and she loved it. :) 




Here are the ingredients


Ingredients

For the cupcake.


  • 1 1/2 cups All purpose flour
  • 1 Tsp baking powder
  • A pinch of baking soda(Optional)
  • 2/3 cup sugar
  • 1/3 cup vegetable oil or canola oil
  • 1 Tsp cardamom powder
  • 1 Tsp vanilla extract
  • 1 cup Mango puree.
  • 1/2 Tsp salt

For Buttercream:

  • 1/2 cup butter
  • 2 cups powdered sugar
  • 1/2 Tsp vanilla extract
  • 2 to 3 Tbsp of Milk or water

Method:

  • Preheat the oven to 350 F or 180 C
  • sift all the dry ingredients such as flour,baking powder,salt and baking soda in a bowl and keep aside.
  • In an Electric stand mixer with paddle attachment or hand mixer beat the oil and  sugar in a bowl to make very creamy one 
  • Add the mango puree and mix well until it is well incorporated.
  • Add vanilla extract
  • Add cardamom powder
  • Mix well until it is incorporated.
  • Transfer the batter about 2 Tablespoons of each and every into the mini muffin pan or regular muffin pan lined with baking cup paper
  • Bake it for about 15 to 20 minutes or the tooth pick comes out clean after inserted into it.
  • Allow it cool on the cooling rack.

For Making buttercream

  • By using electric stand mixer with paddle attachment or hand mixer beat the butter and sugar to it till it gets very creamy one.
  • Add vanilla extract
  • If it is stiff, then add milk/water to make medium icing and helps to decorate on the top
  • Transfer to the piping bag with 1M swirl tip and decorate it as rosettes

To Assemble:

  • IF you have new flower pot clay one.
  • Place the foam into it and insert the tooth picks 
  • Attach the cupcakes side up after inserted the tooth pick to hold.
  • Decorate the flower pot as your like.
  • Its alike attached flowers in flower pot as decorative display as I made it for my mom on Mother's Day.

Combo Fruit Lassi by Non blogger friend for my Blog Anniversary!

Dear Friends

First of all I must thank to Bini who had mailed me and she is my first non blogger friend for my blog 1st anniversary event.It is so wonderful to see her and know about her and she sent combo fruits lassi..Isn't it amazing? 

Introduction about my non blogger friend : Bini Basheer!


My name is Bini Basheer. I am from Kerala. I am working in Kerala State Electricity Board..I have got my mom and dad at my home...I had a brother...My marriage is almost fixed...I came to know about this event through FB....I am a non blogger.Really glad that u allowed non bloggers also to be a part of this wonderful event dear.....Let me use this opportunity to show case my dishes dear...Starting with one of my personal favorites ........



Name : Bini Basheer
Recipe Name :  Combo Fruit lassi

       I am a great fan of chill items such as smoothie, salads, salsa etc...I sweat a lot...So I always use to consume cold items to make my body chill...I always use to experiment in case of cold items...So the recipe i am going to showcase here is one of my experiments which found a successful result...My family members are great fans of my lassi preparations...You guys also try this when u get time..especially to beat this unbearable hot climate...So letz start




INGREDIENTS

       As this is a combination of lassi of  three fruits, letz discuss one by one...

a)  PAPAYA LASSI

1)  Papaya ( ripened, chopped) - 1 cup
2)  Yoghurt - 2 tablespoon
3)  Water -  3/4 cup (add more if u want to make more loose)
4)  Sugar -  2 tablespoon (add more if needed)
5)  Cardamom powder - 1 pinch
6)  Cashew nut (crushed) - 1 teaspoon 
7)  Ice cubes (crushed) - 1 teaspoon (small)

Grind all the ingredients numbered 1 to 5 in a blender till the mixture becomes smooth.

b)  GREEN GRAPE LASSI

1)  Green grapes ( ripened, chopped) - 1 cup
2)  Yoghurt - 2 tablespoon
3)  Water -  3/4 cup (add more if u want to make more loose)
4)  Sugar -  2 tablespoon (add more if needed)
5)  Cardamom powder - 1 pinch
6)  Cashew nut (crushed) - 1 teaspoon 
7)  Ice cubes (crushed) - 1 teaspoon (small)

Grind all the ingredients numbered 1 to 5 in a blender till the mixture becomes smooth

c)  BANANA LASSI

1)  Small Banana ( ripened, chopped)  -  1 cup
2)  Milk -  2 tablespoon
3)  Nutella -  1 tablespoon
4)  Yogurt - 2 tablespoon
5)  Sugar -  2 tablespoon (add more if needed)
6)  Cardamom powder - 1 pinch
7)  Honey - 1 tablespoon
8)  Water - 1/2  teaspoon
9)  Cashew nut (chopped) - 1 teaspoon 
10)  Ice cubes (crushed) - 1 teaspoon (small)

Grind all the ingredients  numbered 1 to 8 in a blender till the mixture becomes smooth. If the mixture is so thick, compensate it with milk...Don't use water)

PROCEDURE

1)  Fill 1/3 portion of  a glass (preferably a lengthy one) with PAPAYA LASSI. Then garnish this layer with chopped cashew nuts and crushed ice cubes
2)  Fill the next 1/3 portion with BANANA LASSI. Then garnish this layer with chopped cashew nuts and crushed ice cubes
3)  Fill the next 1/3 portion with GREEN GRAPE LASSI. Then garnish this layer with chopped cashew nuts and crushed ice cubes.

Refrigerate and serve this chill chill drink...

Fruits Charlotte Cake(An Egg-less)

Hi Friends

Charlotte Russe is an old name as redirected as Charlotte.It is originated  from Europe especially France! It is one of the classical rare recipe made by older generations in the 1900's. 

Its a type of dessert that can be served warm or cold.Sponge cake or Ladyfingers biscuits  can be used to line a mold which is then filled with a fruit puree or custard.and the topping can be added any fruits of your favorite choice.

We just loved it and it has lots and lots of fruits based on your choice.



Ingredients:

  • Ladyfingers Biscuits (I had used ladyfingers  biscuits for my Tiramisu) You can follow the recipe here.
  • Sponge Cake of your choice either egg-less or egg based cake preferably 6 or 8 inch cake..
  • Agar Agar Powder or Agar Agar (about 2 Tablespoons)
  • 1/2 Cup Water
  • 1/4 cup mascarpone cheese (If u want to replace you can add 2 egg yolks.)
  • 1/2 cup sugar divided.
  • 1/2 cup milk
  • 1 Cup whipped cream
For Garnish
  • Any fruits of your choice such as thinly sliced apples,strawberries,kiwis and peaches too.
  • Powdered sugar for dusting.
Method:

1.For Making the base.
  • Keep the wax paper or parchment paper on the spring-foam round pan about 6 inch or 8 inch.Place the ladyfingers biscuits/1 layer baked sponge cake on the bottom and all the sides.
2. For making the Filling:

  • In a medium saucepan on a medium heat,Add 1/2 cup milk and allow it to boil. Add 1/4 cup sugar and stir well till you get taste whether sugar is enough.
  • Turn off the heat ,Add vanilla extract to it.Allow it to warm,
  • Cover it with lid.
  • Meanwhile add Agar Agar powder into the water as per follow the instructions in the package.
  • Meanwhile Whisk the mascarpone cheese with 1/4 cup sugar in a medium bowl.Whisk well till you get pale in color.
  • Pour the milk-sugar-extract mixture to the egg mixture while stirring in three additions.Make sure it is well incorporated.
  • Again heat the milk egg mixture(Custard mixture) on a very medium low heat and keep stirring constantly till you see the bottom part gets thickened.Do not overcook or boil.
  • Finally add agar agar powder mixture to the custard mixture. Let it sit for about 5 mins
  • Using colander remove the unwanted particles after pouring the milk-egg mixture into a saucepan,
  • Take ice-water in a bowl, Place the medium bowl which has custard mixture on the ice-water bowl.Keep stirring till you get thickened mixture.
  • Add whipped cream to the custard mixture and fold gently until it is well incorporated.
  • Pour the whipped cream-custard mixture to the base of the mold till it reaches the top.
  • Keep it in the fridge till you get the filling set.for about 1 hour.
For making Topping:

Wash well and slice as your own design of any fruits as you like.I  made the topping such as apple and strawberries.

Place the fruits on the top of the charlotte cake.Garnish it with powdered sugar on the top to give a good look

Serving options : Serves best when cold or at room temperature.

Celebrate - Love For Mum!

Hi friends

Hereby I am so happy announcing for hosting this event called as LOVE FOR MUM! as my beloved Jagruti madam has asked me whether Are you able to do for this month and I immediately nodded my head and said Yes as it is one of my favorite month because it is on Mother's Day.

We are truly honored to our mom as she did all her hardworking, bringing her kids to come up in life,loving.caring and affectionate.

I will be very delight to see you posting wonderful dish/memories for your mom who baked/cook it for you since childhood and you would like to bake /cook the same as what ever your mom do for you and make your mom the best remembering memories. A Pure Eggless Tiramisu with eggless savoiardi biscuits

Hi Friends!!!

On April Month,Baknig Eggless was announced to make Tiramisu and I am so happy by hearing it.After visit to an Italian Restaurant named as Olive Garden, we had ordered Tiramisu and we want to taste it how will it be? We tasted  it and we just loved it.It was so drooling.I am waiting for the right time to make tiramisu and it came which is pure eggless one.It is very challenging to make everything as homemade ones.I am sure anybody can do it. I am so thankful to sowmya who suggested it and many thanks to Gayathri for selecting this recipe for April month

Tiramisu means "Pick me up" is an Italian dessert and is famous all over worldwide. Here I made homemade savoirdi biscuits which has no eggs and it tasted lovely and soaked well even though it is flat one and not exact like Ladysfinger savoiardi store bought biscuits. If you cant bake ladysfinger biscuits and it is fine you can use eggless sponge cake.

It reminds me the best own recipe of my mom who made normal biscuits and cream into many layers into the rectangle box and keep in fridge for about 2 days during summer holidays. It is best chilled to have it along with my brother as we used to call chilled biscuit cake alike frozen icecream biscuit :).I didn't know it was alike tiramisu after staying in the U.S. It is my mom's love for it :) We fought with  each other to get the last bit of the chilled dessert and my mom used to say crazy kids :) and the words came true and we were crazy for the sweet tooth desserts :) Lol. I shared with  my daughter about sweet memories of this recipe and she laughed and told again crazy mom :) HaHa :)

Here is my eggless tiramisu and it is really taste and while slicing it,it looks exact like beautiful layers of cheese and biscuits.



Ingredients:

For Making Savoiardi Biscuits adapted from here if you want egg otherwise go for eggless one as below. I have reduced to half of the measurements.


  • .2 Tbsp Sugar
  • 1 Cup All purpose flour
  • 3/4 cup All purpose flour
  • 1/2 Tsp Vanilla Extract
  • 1/4 cup coarsely ground almonds.
  • Powdered sugar for coating.

For Making Mascarpone Cheese:
I used  store bought cream as I didn't get time for it.You can try for homemade mascarpone cheese adapted from here.

For Making Tiramisu you will need.
  • Savoiardi biscuits
  • 1/2 cup Coffee Syrup( I had used Instant coffee with 1 Tsp of sugar and warm water)
  • 2 cups Mascarpone cheese.
  • 1 cup whipped cream
  • 1 cup Sugar
  • Unsweetened cocoa powder for dusting.

Method:



For Making Savoiardi :Wrap the aluminium foil on the baking sheet

  1. Beat the butter and sugar in a wide bowl by using hand mixer to get creamy.
  2. Sift the flour and add the ground almonds to it.
  3. Add vanilla extract to the butter mixture
  4. Add flour in 3 additions to get well incorporated.Transfer into the piping bag with open tip or tip 12 round tip.
  5. Make into finger shaped batter as seen in the picture.Bake it for about 30 to 35 minutes on 300 F or 170 C till it gets slightly brown in color.
  6. Add the mascarpone cheese and beat well until it is smooth,Add sugar to it.
  7. Allow it to cool on the cooling rack
  8. Dust the savoiardi fingers with powdered sugar.
  9. Add the whipped cream into mascarpone cheese sugar mixture in 3 additions and make sure not to over folding.Fold it gently.
  10. To assemble:keep the creamy mixture,coffee syrup and biscuits. Take any loaf pan or round pan or mini rectangle pan,place the fingers into the coffee syrup for a second and place it on the pan and repeat the process till you get completed.
  11. Arrange the biscuits well after soak it for 1 second.
  12. Once the biscuits is soaked well in coffee syrup and arrange it well.
  13. Place the creamy mixture over the biscuits evenly
  14. Repeat the biscuits soaked in coffee syrup and arrange it well.
  15. Apply the creamy mixture over it evenly.
  16. Allow to cover completely with a wrap and keep in the fridge for about 2 days or 3 days.before serving dust it on the top with cocoa powder
  17. You will see layers as I had arranged in 3 layers
  18. It is firm and well stabilized as u kept it in the fridge for about 3 days and it is the best to serve.
  19. Transfer to the serving plate and garnish it as you like.
  20. Slice it gently while being served.

It is celebrated all over the world as Mom is the best and empowers in family life!

I am so happy for this month as my mother is special so all you does the same. I would like each and everyone blogger and non blogger friends to post very unique or creative ideas for baking as well as broiled recipes on the eve of Mother's Day who loves the surprises by Mom and bake according to your mom's favorite ones or make it as an surprise ones and would like you to post the recipes to my event and vardhini's event announcement.
