Eggless Mango Strawberry Cheesecake (No Bake)

Dear Friends!

Mango is the most favorite fruit  and It tastes very great in any method of cooking and baking too.When I was reading the Baking Partners Challenge #9. I had immediately read the eggless one because it has mango and it is one of my favorite fruit.Adding Agar Agar is tricky one. It is very challenging for me to do.I had already baked Cotton soft Japanese Cheesecake in my previous post.I want to give the best thing to do an egg-less one. You also try for it. I am really thankful to Swathi of Zesty South India and Sweatha.

I had made homemade curd and strained well over night to get thickened cream yogurt and homemade paneer too.I also choose to make cheesecake into a glass with little bit of strawberry pieces as my daughter loves it. It is double fruits cheesecake in a Glass as It is very tricky one. Most did is using pan or muffin pan.I just did in a glass because it does not require baking! It goes great with guests for  the dessert. It tastes so perfect,soft and the flavor taste of cardamom as I made mango puree and added cardamom too. 

You can use it any pan or muffin pan or even glass of your favorite one.




Recipe adapted from Divine Taste suggested by Sweatha.

Here are the ingredients as follows! I had reduced to half of the measurements.You can follow the full measurements.

For the Crust:


  • 1 cup Digestive Biscuits.I had used Honey Graham Cracker Biscuits. crushed
  • 2 Tablespoons of salted butter.
For Filling

  • 1 Cup Homemade Paneer or Store bought Cottage Cheese(Paneer)
  • 1/2 cup Fine sugar
  • 1 1/2 cups Thickened cream yogurt
  • 1/2 Cup Mango puree (Peeled,chopped and pureed)
  • 1/2 Cup Strawberry puree(Chopped and pureed)
  • 15 grams of China grass or Agar Agar
  • 1 Tsp vanilla extract
For the Mango Glaze
  • 1/2 cup Mango puree(I had chopped the mango after peeled, I had added 1/4 Tsp of cardamom powder while making the puree)
  • 1 Tbsp Water
  • 1 Tbsp Sugar
  • 1/2 Tbsp Lemon juice

Method:

For making thickened yogurt,Place the yogurt in a cheesecloth lined in a colander and allow it to strain for an overnight to get half one. I had made this  a day before making the cheesecake process.

For Making the crust.

  • Put the biscuits into a zip lock plastic bag and seal it. Roll the biscuits in a zip lock by using rolling pin to get the crushed biscuits.Keep rolling till you get the crumbs of the biscuits.Transfer the rolled biscuits into a medium bowl.
  • Add the chopped butter into the biscuit bowl and make into crumbs by using pastry blender or using with your hands to get butter coated biscuit crumbs.
  • Place the butter covered biscuit crumbs on the botttom of the glass or pan or muffin pan lined with baking cup paper. Press it evenly
  • Keep it in the fridge for 1/2 hour or until it is firm

For Making the filling

  • Take out the strained thickened yogurt and paneer strained out from the water if it has.
  • Blend the thickened yogurt and paneer into smooth and creamy by using blender or mixie.
  • Transfer the cheese mixture into the bowl
  • In a bowl, add 3/4 cup water and 15 gms of agar agar into it.Allow it to soak for about 10 minutes or until it is soft.
  • In a medium sauce pan in a medium heat.Place the mango puree to it and allow to stir continuously and must not allow to boil.
  • In a medium sauce pan in a medium heat.Place the strawberry puree to it and allow to stir continuously and must not allow to boil.
  • In the same time place the agar agar along with water mixture into the another medium sauce pan on low heat,Allow it to melt completely which will take it for about 5 to 7 minutes.
  • Pour the hot mango puree and hot strawberry puree into the hot agar agar mixture. Stir well.
  • Add the mango strawberry agar agar mixture into the yogurt and cheese mixture slowly and add the sugar and vanilla extract,Mix well with the help of a whisk to get well incorporated.
  • Pour the filling mixture into the prepared crust in a glass.
  • Spread evenly with a spoon.
  • Allow it to chill into the fridge for about 3 to 4 hours or until it is set.

For Making the glaze.

  • In a medium sauce pan, add the mango puree along with sugar and water and lemon juice.Allow it to cook till  it gets thickened and switch off the heat.
  • Allow it to cool at room temperature.
  • Spread the mango glaze evenly with a spoon over the cheese mixture which is set.
  • Allow it to cool in the fridge for about 1 to 2 hours or until it is set.
  • Serve chilled or at room temperature.
  • Garnish it on the top with grated chocolate pieces or just any fruit of your choice.

Cotton Soft Japanese Cheesecake

Dear Friends

It was so amazing to make cheesecake.On Baking Partners challenge #9 has selected Cheesecake.It was so wonderful to bake or no bake cheesecake.It is really wonderful to bake cheesecake and very challenging task to make it.

I have chosen Egg based Cheesecake one that is very soft alike cotton  and It is called as Cotton soft Japanese Cheesecake.

Here are the ingredients as follows.

Ingredients


  • 2/3 cup or 5 oz Fine sugar
  • 2 oz of All purpose flour or cake flour
  • 1 oz of Corn starch
  • 1/4 Tsp salt
  • 6 Egg whites
  • 6 Egg yolks
  • 1/4 Tsp of cream of tartar
  • 2 oz or 1/4 cup Butter
  • 8 oz of Cream cheese 
  • 3 oz of milk
  • 1 Tbsp lemon juice from 1 lemon.

Method:

  1. Sieve the all purpose or cake flour along with salt and corn starch in a bowl. Combine together.Keep aside.
  2. Separate the 6 eggs for yolks and whites
  3. In a double boiler on a medium heat, Add the cream cheese along with milk and butter and allow it to melt.Allow it to cool down.
  4. In a medium bowl,add the yolks only along with 2 Tablespoons of sugar and mix well.
  5. Fold in the flour along with egg yolk mixture and cream cheese butter milk mixture gently.Finally add lemon juice.Mix well.
  6. In an electric stand mixer or hand mixer with a whisk attachment,place the egg whites along with cream of tartar to it.Beat well until it is frothy and foamy.
  7. Add the remaining sugar one by one in three additions to get stiff peak forms.
  8. Once the egg whites has peak form,Add the cream cheese yolk mixture to it. Fold gently until it is well incorporated.
  9. Grease butter and dust it with flour on the bottom and sides of the 8 or 9 inch spring foam pan. If you have parchment paper,cut the paper into circle shaped of the pan size and place it into the bottom of the spring-foam pan.
  10. Transfer the batter to the spring-foam pan evenly. 
  11. Take an extra baking deep one rectangular pan, pour the hot boiling water to it and place the spring-foam pan in a water bath.
  12. Allow it to bake for about 1 hour 10 minutes at 325 F or 160 Degrees C or until it is set or gets golden brown on the top.
  13. Allow it to cool on the cooling rack.
  14. Once cooled,remove the spring-foam pan and place it on the serving plate.
  15. Cut into slices and serve along with powdered sugar and fruit glaze of your choice.

An Italian spiced Herbs Monkey Bread


Dear Friends 

After used many types of normal bread and I feel we have to do something different in which have not tasted it.I gave an idea to do spiced herb bread.I was thinking about the size of the pan what to use.I got an idea of how about doing the Monkey Bread after watching Food Channel. It was so challenging and finally made it.It is like pull- apart bread.It goes great with any pasta based on an Italian pastas or soup.I have decided to add only herb spices based on an Italian seasonings.I had added basil, oregano and all as given in an Italian seasonings bottle.I can say it is an Italian herbs spiced monkey bread :)




We had it along with pasta and it goes very tasty and best dinner we had :) 

Here are the ingredients for making bread and prepared herbed spices 

  • 3 to 3 1/2 cups of All purpose flour
  • 2 Tablespoons sugar
  • 1 package (1/4 Oz) yeast(Red Star Quick rise Yeast)
  • 1 Tsp Salt
  • 1 cup milk plus 1/4 cup warm milk
  • 2 Tablespoons of any oil such as vegetable oil or canola oil or olive oil
  • 4 Tablespoons unsalted butter Divided into 2.
  • 1 Egg.(If you don't want to add egg, then increase the amount of milk.)

For making the herb spices

  • 1 Tsp or 1 Tablespoon of White sesame seeds if you like to add.
  • Each 1/2 Teaspoon of Thyme,Rosemary,Oregano and parsley dried leaves or majoram
  • 1 Tsp of garlic powder if you have or  add minced garlic from 1 whole garlic or half
  • 3 Tablespoons of grated Parmesan cheese
  • 1/2 Tsp of paprika


Method:

Apply butter on the bottom and all over the sides of the bundt pan or round pan 9 inch.Keep aside.

For making the bread dough:



For making yeast I had used it on my own way

  • Add the yeast along with warm milk and add sugar to it.Mix well and keep aside and allow it to rise.
  • Sieve the dry ingredients such as flour and salt in a bowl.
  • Make a well on the center of the flour mixture bowl and pour the risen yeast mixture to it.
  • Add a egg to it and mix well by using dough attachment in electric mixer or stand mixer. or knead it by using your hands.
  • Knead well till it is smooth and elastic. Atleast keep on kneading for about 10 minutes.
  • Grease the butter on the bottom and sides of the bowl and keep the dough into it.
  • Cover it with kitchen towel 
  • Allow it to keep inside the oven with light on as it will be a warm place for allowing the dough to rise well.Allow it to rise for about 1 to 2 hours or depends on the weather there.
  • Once risen up,punch out gently as shown in pic.
  • Prepare the herbs under the ingredient as given. Mix well until it is well combined.
  • Divide the dough into two.Make into small balls.
  • Take a butter into a bowl Dip each and every ball into the butter and covered it with herbs in a bowl.
  • Once the ball is covered with spices and place it on the bundt pan as shown in picture.
  • Keep the remaining balls and so on.
  • Once it is finished. Cover it with kitchen towel again.
  • Allow it to rise up again for another 1 hour or until it is doubled up in size.
  • Once risen up then bake it for about 30 to 35 minutes at 350 F or 180 C. Insert a tooth pick and it comes out clean then take it out from the oven.
  • Allow it to cool slightly as it is best to eat  the warm bread.
  • It is best served along with your favorite choice of pasta or soup.

Hot Cross Bun Rolls An Eggless Roll!

Dear Friends

Wishing you and your family a Happy Easter!!! May God bless you and your family!!! Here is the Easter special roll as Easter Hot Cross Buns and Bunny and Nest filled with gems! :) Thank you so much Gayathri and Priya who suggested it for baking eggless group.






Here are the ingredients as follows!

Ingredients:


  • 2 Tsp Yeast( I had used Red star Yeast Quick Rise packet)
  • 1 Cup warm milk
  • 1 Tablespoon Sugar
  • 1/4 cup brown sugar
  • 1/4 cup butter
  • 3 Cups All purpose flour
  • 1 Tsp of salt
  • 1/4 Tsp of ground cinnamon
  • 1/4 Tsp of ground cloves
  • 1/4 Tsp of ground nutmeg
  • 1/2 cup to 1 cup of currants
  • 1/4 cup of Tutti fruity(Optional)
  • 1 Tablespoon of lemon zest
For Making the glaze

  • 1 cup Powdered sugar
  • 1/2 Tsp vanilla extract
  • 4 to 5 Tsp of milk.
Method:



  1. Mix the yeast along with warm milk about 2 Tablespoons and white sugar.Whisk well and keep aside till it gets frothy and foamy
  2. Add the dry ingredients such as flour,brown sugar,salt and all spices and grated lemon zest to it. Combine all together and knead  the dough by adding milk little by little till you get smooth and elastic soft dough.
  3. Add the currants and tutty fruity to it and knead for some more time. 
  4. Knead well till it is soft and smooth.
  5. Grease the butter into the stainless steel bowl and place the dough into it 
  6. Cover it with kitchen towel and let it rise about 1 to 2 hours in the oven with light on.
  7. Once it is risen up and it is ready to make bun. Pre heat the oven to 350 F or 180 C
  8. Punch down and start to divide the dough into halves..
  9. Take 2 small balls of the same size. make it into thin roll like log of the same size. Pinch together the edges and braid it like that and form into a circle.
  10. Take the 3 small balls of the same size make it into a thin roll like log.Pinch all together to form three and braid it like that and form into a circle.
  11. Remaining dough make into medium balls of the same size for hot cross buns. and 2 balls for bunny.one ball to make it thin roll like log and form a spiral for bunny's body. and other ball make it round face and form into a slightly cone and cut it with scissors on the edge  of the cone to get bunny' ears. Place the rolls on the baking sheet,cover it by kitchen towel and allow it to rise for another 60 minutes 
  12. Once it is risen up,Take a scissors and cut into cross on the round buns. Take few tablespoons of butter along with little milk, Mix well and apply on the top of the rolls by using pastry brush and bake it for about 15 to 20 minutes or till you get light brown in color.
  13. Allow it to cool on the cooling rack.
  14. Once cooled,Add the chocolate gems into the braided nests.
  15. Combine the powdered sugar,vanilla extract and milk till you get smooth consistency.Transfer the glaze into the piping bag and put cross on the top of the round buns to get Hot Cross Bun :)

Pineapple Choco chip cookies

Dear Friends!


I have never thought of making fruit for cookies! Most I have done for cookies is Choco chip cookies! I never tried for fruit themed cookies. After hearing the name as Pineapple and want to try out the cookies with pineapple flavor. I had decided to add the cookies as an assortment cookies alike Nan Khatai (An Indian cookie). Here are Cinnamon brown sugar covered pineapple choc chip cookies,Coconut covered pineapple choc chip cookies and nut topped on pineapple choc chip cookies! Enjoy!!!




Ingredients:

For Pineapple Flavor


  • 2 Cups of Pineapple cubes
  • 1/4 Cup sugar
  • 1 Tsp Cardamom powder
  • Little Water.
For Making the Cookies

  • 1 1/2 Cups of All purpose Flour or maida
  • 2/3 Cup of sugar
  • 1 Tsp of Baking powder
  • 1/4 Tsp of salt.
  • A pinch of nutmeg powder
  • 2 to 3 Tablespoons milk 
  • 1/4 Cup semi sweet choco chips

For Toppings

  • 1/4 cup sweetened coconut flakes
  • 1/4 cup brown sugar
  • 1 Tsp of ground cinnamon
  • Few pieces of Walnut or any nuts as you like.
Method:




Preheat the oven to 350 F or 180 C.Line a parchment paper on the cookie sheet.Keep aside.


  1. Add 1 cup of pineapple cubes and little water into the blender to get the juice.It gets thickened and add 1 Tsp of cardamom powder and sugar tin a bowl under the ingredient as given "For pineapple flavor" 
  2. Sieve all the dry ingredients such as flour,baking powder,sugar,nutmeg and salt Combine all together by using whisk. Add the pineapple flavor mixture  as above step 1. 
  3. Combine all together  and add milk little to get smooth dough.Make sure it does not stick on your hands.If in case add extra 1 to 2 tablespoons of flour to it.
  4. Add choco chips to the dough.Knead well till the choco chips are into the dough.
  5. Take a plate combine both the cinnamon and brown sugar for the topping.Make into a ball of each and every dough. Cover the ball coated with cinnamon and brown sugar and place it on the cookie sheet.
  6. Also Add shredded coconut flakes in a bowl, coat the ball covered with coconut flakes.and place it on the cookie sheet,  Remaining balls add each and every walnut on the top of the cookie.
  7. The assorted cookies are ready to bake.Take a fork and press on each and every cookie gently except walnut topped cookies. Bake it for about 10 to 12 minutes or until the edges and bottom starts to brown. Allow it to cool on the cooling rack.
  8. It is best to serve along with a cup of tea or as a snack for kids!!
