Fruitcake Cookies

Dear Friends!!!

Here We wish you and your family Merry X Mas :) May your day have filled with fun and happiness!!! Also wishing you and my dearest friends Happy New Year!! :) Herewith I made our Christmas Fruitcake cookies.It was so amazing,tasty,colorful dried fruits and of course It has free alcohol.It is lovely baked and aromatic at home while baking!!! It is so crunchy! It made me happy and smiled by seeing it :) Here is the recipe and go for it!!!
Recipe Adapted from Food Network's Ina Garten.
Ingredients:
  
  • 1/2 cup Raisins
  • 1/4 cup Cashew nuts chopped
  • 1/2 Cup Dried cranberries
  • 1/4 cup dried apricots, coarsely chopped
  • 1 tablespoon honey
  • 2 tablespoons Apple Juice Concentrate
  • 1 Tablespoon freshly squeezed lemon juice
  • 1 Cup Dates chopped.
  • 1/4 cup Tutti fruity(Colorful)
  • 1/4 Tsp Salt.
  • 1 Cup  (2 sticks) unsalted butter, at room temperature
  • 1/4 teaspoon ground cloves 
  • 1/4 Tsp Nutmeg powder
  • 1/2 cup superfine sugar
  • 1/3 cup light brown sugar, firmly packed
  • 1 extra-large egg
  • 2 2/3 cups all-purpose flour 
Chop the dates. In a medium bowl, combine the dates, raisins,cranberries , apricots, honey, apple juice, lemon juice, cashew nut, tutti fruity and a pinch of salt. Cover with plastic wrap and allow to sit overnight at room temperature.

Method:
1.Using electric mixer or hand mixer, cream the butter, white sugar, and brown sugar on medium speed until smooth.
2.With the mixer on low speed, add the egg and mix until incorporated. 
3.With the mixer on low speed, slowly add the flour and 1/4 teaspoon salt . 
4.Mix well until it is well incorporated.Don't over mix! 
5. Add the fruits and nuts covered with remaining flour taken from 1/3 cup flour

6.Put the dough mixture on the long edge of a 12 by 18-inch piece of parchment or waxed paper. Roll into a log, 1 1/2 inch thick on the baking sheet. Refrigerate the dough for few hours, or until firm.
Preheat the oven to 350 degrees. 
7.Take out the refrigerated dough and place it on the chopping board.
8.Allow it to stand before cutting it.
9.Remove the wax paper and allow it to cut the logs into 1/2-inch-thick slices with a small sharp knife.
10. Place the slices 1/2-inch apart on ungreased baking sheet and bake for 15 to 20 minutes, until lightly golden. 
11.It is being served warm or cooled.
