Hello!!! I was being looking for different ones and I got an opportunity to do Danish cake as A cake originated from Denmark :)suggested by Meena and selected By Gayathri of Baking Eggless group and It was so exciting for me to do..I find it hard part is Eggs to replace.It is very challenging task for me to search and googled about what to replace more eggs for! After got help from my friends most suggested are condensed milk,curd and baking soda..I want to add only one ingredient which can replace with eggs. Once I had made Yogurt cake and it was big success.So want to try out the main ingredient as "Curd/Yogurt"
It was very thrilling while making batter because I used all the ingredients as given without any changes.Only one thing to change is Eggs.I just loved it and it was an amazing taste and very soft and moist too.Everyone in my family had enjoyed a slice. It was a big success. Here is the recipe and Enjoy a slice of cake with your family and friends :)

Here are the ingredients:
For the Cake:
- 2 1/4 Cup All purpose Flour
- 1 1/2 Tsp Baking powder
- 1/4 cup Unsalted Butter
- 3/4 Cup Milk
- 1 Cup Homemade Curd
- 1 1/3 Cup sugar
- 1 Tsp Vanilla Extract
For Topping:
- 1/2 Cup softened unsalted butter (Room temperature)
- 1 1/3 cup Dessicated Coconut flakes
- 1/4 Cup Milk
- 1 1/4 cup Light brown sugar
Method:
Step by Step wise Picture.
Preheat the oven to 350 F or 180 C.Line a parchment paper into the greased Square 9 Inch pan.Grease it on the paper and keep aside.
Step 1:
In a saucepan,Add the better along with milk and keep stirring till it melts.Turn off the heat and keep aside.
Step 2:
Add the flour and baking powder and a pinch of salt if you want. Sieve it into a bowl.Keep aside.
Step 3:
Add the curd,sugar and vanilla extract.Mix it well until it is smooth.
Step 4:
The Wet mixture is ready and add the melted butter milk mixture to it and mix well.
Step 5:
Add the flour in three additions to the wet mixture until it is well incorporated.Make sure that don't over mix.
Step 6:
Cake Batter is ready
Step 7:
Transfer the cake batter into the greased baking pan. Bake it for about 15 to 20 minutes or until the tooth pick comes out clean.
Step 8:
Cake is baked fresh from the oven.
Step 9:
For the topping ingredients, Mix all together to get creamy covered coconut flakes.
Step 10:
Apply the topping mixture immediately on the baked cake.evenly
Step 11
Reduce the oven temperature to 325 F.Keep the pan onto the top inside the oven for about 10 minutes or until it is brown in color looks like caramel color. Allow it to cool before slicing.
Step 12:
Slice it and serve it
