Kerala Style Unniappam

Dear Friends

Unniappam(sweet rice appams) is the most favorite sweet recipe as we are keralites and we used to make it for Krishna Jayanthi Celebrations or other occasions.My mom will always make it whenever the festivals are nearing.It is the most favorite sweet for me and my brother.I asked my mom for the recipe and she gave it to me.I had followed the method and made it.It tasted the same as exact as my mom had prepared it since my childhood days!!Now she still made appam for my daughter and loved all her grandmother's recipes.

Here it is

  • 2 cups rice flour or raw rice.
  • 1 cup Jaggery
  • 3 Plantain bananas or small bananas ripe ones
  • 3 to 4 Cardamom pods or 1 Tsp crushed cardamom
  • 1 cup Coconut tiny bits 
  • 1/2 Tsp Black Sesame Seeds /Ellu
  • 1 1/4 cups Water for jaggery
  • Coconut Oil and Ghee for frying


  1. If you are using the raw rice,Soak the raw rice for about 2 hours and drain the water 
  2. Take a paper or big plate,spread the drained rice and keep outside the balcony or sunlight and allow it to dry 
  3. Once dried go to the mills and grind it for smooth fine powder.
  4. If you are using store bought rice flour,then lightly roast the rice flour in the frying pan.keep aside
  5. Take a saucepan,add the jaggery and water and allow it to boil till the jaggery gets dissolved on medium heat.
  6. Drain out the impurities of the jaggery syrup.
  7. Add 1 Tablespoon of Ghee into the medium frying pan,Roast the coconut bits and allow it to cook till brown in color Keep aside
  8. Add the sesame seeds in the same ghee frying pan and roast lightly.
  9. Chop the bananas into small pieces or mash the bananas if you like.
  10. Take a wide bowl,Add the rice flour,drained jaggery syrup one by one till you get the batter consistency.
  11. Add bananas,cardamom pods or crushed cardamom powder 
  12. Finally add the coconut bits and sesame seeds to it and mix thoroughly
  13. Allow the batter to sit for about 1 to 2 hours.Cover it with lid.
  14. Take appam mold (cast iron mold),Add a spoon of coconut oil and ghee to it.Once it is heated,add a spoonful of appam batter to it
  15. Allow it to cook till it gets bubbly and sides are cooked till it gets golden brown in color
  16. Flip the side of the appam and let it cook and both sides gets brown in color.
  17. Repeat the process from 14 to 16 steps.
  18. Drain the appams with the tissue paper
  19. Serve warm.

Thai Style Deep Fried Bananas!

Dear Friends!!!!

I am making this because my parents visited Asia Pacific country during their trip  and she got it and tasted and said me It was so different from Kerala Style Deep fried plantain fritters.Here I have made Keralite recipes for Plantain Fritters last time and during childhood days along with my bro my mom used to make it as a snack and I want to try out differently and it tasted so  different and adding coconut is amazing. I made Thai Style Deep fried Plantains and go for it..Thank you mom for giving very delicious dessert recipe :)

It goes great with a Cup of Tea  or it is a Snack Time.

  • 1 Cup Flour (1/2 Cup of All purpose Flour plus 1/2 cup Rice flour)
  • 1/2 up Sugar
  • 1/2 Cup  unsweetened coconut flakes or freshly grated coconut.
  • 3 Ripe thinly Sliced Plantains(Not too ripe) Atleast yellow skin with green color on the bottom.
  • 1/2 Tsp Baking soda
  • Warm Water to adjust the medium consistency batter.( I used 1/4 to 1/2 cup water)
  • 1/2 Tablespoons of Sesame Seeds
  • 1/2 Tsp salt.
  • Oil for frying


  1. Heat the oil in the deep frying kadai/pan and make sure the oil is hot on medium heat.
  2. Cut the bananas into lengthwise at least 1/4 inch slices.
  3. Mix the flours, baking soda,salt and sieve it once in a bowl.
  4. Pour the warm water to it till you get the medium consistency batter
  5. Add the grated/unsweetened coconut and sesame seeds
  6. Finally dip the sliced bananas to the batter and put it in the heated oil frying pan and allow to cook until it gets brown in color on both sides.
  7. Wrap the fried bananas with the tissue paper.Allow it to absorb the oil.Repeat the batch till the plantains gets dipped over and fry.
  8. Serve warm along with cup of tea or goes well with ice-cream once the fried plantains is set cooled. or garnish it with chocolate sauce if you like.

Sooji Matar Dhokla -Potluck Event

Hello Friends!!!!

Here I have made dhokla using microwave method since I didn't have steam support plate for holding the dhokla/dhokla stand.I had decided to use in Microwave Method...My dhokla has turned out red because of microwave method and used baking soda since I didn't get ENO fruit salt. I had adjusted it to get an exact dhokla.

I had followed the recipe of Jagruti's Sooji matar dhokla...You can follow her blog and here I made it for potluck event!!!

Here are the ingredients:

  • 1 cup Sooji/Semolina
  • 1 Cup sour buttermilk(Used 1/2 cup curd plus 1/2 cup water)
  • 1/4 Tsp Turmeric powder
  • 1/4 cup lightly mashed green peas boiled.
  • 1 Tbsp Besan flour
  • 1 Tbsp Rice flour
  • 1 Tbsp ENO Fruit salt( Since I didn't get it. so I had used 1 /2 Tsp baking soda and 1 Tbsp Lemon juice)
  • 2 to 3 Tbsp Freshly grated ginger and green chillies puree(about 4 to 5 or depends on your spiciness)
  • Salt to taste
  • 1 Tbsp Oil
Tempering Tadka Ingredients:
  • 2 to 3 Tbsp Oil
  • 1 Tbsp Mustard seeds
  • 1 Tbsp Cumin Seeds
  • Few Curry leaves
  • 2 to 3 Slit green chillies
  • 2 Tbsp grated Coconut
  • Water
  • Handful of Chopped Coriander leaves
  • 2 to 3 Red chillies
  • Asafoetidia(Optional)


  1. Mix all the ingredients except Tempering in a large bowl.
  2. Whisk well until no lumps are found.Keep aside for 10 minutes.Add the mashed green peas to it and mix well
  3. Keep aside for 5 minutes
  4. Grease the oil in microwave safe bowl and transfer the batter to it.
  5. Allow it to cook on High heat for about 1 to 3 minutes.Each minute check once.
  6. Insert the tooth pick/knife into the bowl once it is cleaned or microwave it for about 1 min or 30 seconds or so.
  7. Once it is done,
  8. Take a frying pan ,add all the tempering ingredients except coconut and coriander.
  9. Pour into the dhokla bowl on the top.
  10. Garnish it with coconut and coriander leaves
  11. Cut into desired shapes as you like,
  12. Serve it with mint chutney.

Spinach Thoran by non blogger friend Bini

Dear Friends

Here is the spinach thoran made by non blogger cum sweet friend Bini ..She has done her lovely and healthy recipe called Spinach Thoran. She has done her sweet note about her mom in my hosting event and Jagruti's event Celebrate Series -Love for Mum.

Letz start with a small introduction about my mom..My mom's name is Nadeera Basheer.. I call her ummachi...She is a doctor by profession..My mom is the most busiest person i have found in my life...She is a very active person...She is a normal cook...she doesn't know about baking and all..But which ever normal dish she makes, is capable of satisfying our taste buds to the maximum...She is very fond of sweets and non veg recipes...Nowadays, she seems to be lazy when it comes to cooking...I think her plan is to make me a very good cook as my marriage is also approaching....So she is making me to take the in charge of kitchen most of the days...Blush..Love my mom...I am so happy to cook for my family...All girls dream about having  their own kitchen for the culinary is all about my sweet mom..

This is one of my mom's favorite vegetarian dishes...She loves this recipe very much..She is a big fan of easy to cook recipes...He have a garden of both red and green spinach at our home..Terrace gardening.....My father and mother loves gardening and cultivating...

The basic ingredient is an inevitable one in Indian kitchen...RED SPINACH...So the name of this dish is RED SPINACH THORAN....Of course, u can try this using green spinach too....A very common dish to keralites....The same gravy can be used for many other vegetables like pea,drumstick etc.....So letz start...


1) red spinach/chuvanna cheera - 1 bunch ( finely chopped)
2) coconut (grated) - 1 cup (tea cup)
3) garlic - 2 pods (chopped)
4) green chilly - 2 (chopped)
5) shallots/cheriya ulli/chuvannulli ) - 2 pods (chopped)
6) cumin seeds - 1/4 tspoon (small)
7) turmeric powder - 1/4 tspoon (small)
8) mustard seeds - 3/4 tspoon
9) curry leaves - 1 stalk
10) red chilly/vattalmulaku - 1
11) black gram dal/uzhunnu parippu - 3/4 tspoon
12) oil - 2 tspoon
13) salt - for taste


1) Wash the leaves well....drain it and chop well...
2) Grind ingredients two to six in a grinder and keep it aside.
3) Heat oil in a kadai and put mustard seeds..let it splutter
4) add red chilli, curry leaves and saute for 2- 3 seconds
5) Add black gram dal and saute well for few seconds
6) Add the grinded mixture and saute well till it becomes light brown.
7) Now add chopped spinach leaves and mix well.
8) Add salt and stir well.
9) Cover the kadai with a lid and cook for some minutes in low flame..
10) Off the flame and serve with hot rice....

Here my non blogger friend cum sweet friend posted her recipe in my mail for Celebrate Series - Love for Mum :) Here it is. She has done beautiful and lovely notes about her mom and gave wonderful recipe called Jackfruit Kheer. Am sure it is keralite style :)

Now letz come to our dish..I completely adapted this recipe from my mom...Infact a very delicious dessert...My mom used to prepare this...She is very fond of Jack fruit especially the type "THEN VARIKKA"....Yesterday, One of our neighbors gave us  a jack fruit..I planned to surprise my mom with this delicious dessert when she comes from hospital...and I was so happy  to see her satisfied with my dessert...She didn't left a single drop of milk..Actually my love for her made me to prepare her favorite dessert for her....This dessert is actually made from a very common South Indian fruit called "Jack Fruit"...So Jack fruit itself is the main ingredient...All the ingredients has got its own nutritional value too...So letz start without wasting anymore time...


1)  Jack fruit (roughly chopped)  -  2 cups
2)  Sugar - 1 tablespoon
3)  Salt -  1 pinch
4)  Milk - 1 glass
5)  Ghee - 1 teaspoon (small)
6)  Raisins - 5
7)  Cashew nuts - 5
8)  Cardamom powder - a pinch
9)  Water - Very little


1)  Pressure cook the jack fruit with very little water and a pinch of salt
2)  Off the flame after three whistles and let the pressure release by itself
3)  Boil milk. Add sugar and cardamom powder to the milk and mix well..
4)  Add this milk to the pressure cooker and mix well.
5)  Transfer the mixture in the pressure cooker to the serving bowl..
5)  Roast cashew nuts and raisins in ghee in a pan/kadai
7)  Pour this cashew nuts and raisins along with ghee over thee jack fruit mixture in the bowl...

     Serve hot or after refrigerating it for a while..

My mom came from hospital after 15 minutes after i prepared this for her...So ii got some time to slightly lower the hotness of the dessert...She love to have this dessert in slightly hot stage which is the most tastiest form of this dessert..

  Hope u all liked this delicious sweetish recipe...Each and every ingredients has high nutritional value...and hope u all guys will try it also...

Thin Crust NY Style Pizza with Vegetable toppings - A homemade from Scratch.

Hello Friends!!!!!

I was overwhelmed at this challenge by Baking Partners as Swathi asked me any ideas about pizza recipe and I am sure that there is always best and quick search has reached to site and it helped me to get it.It was 3 different recipes from 3 members including me. It was super exciting as everyone loved the pizzas This pizza made me reminding when my mom made homemade pizza at weekend as we helped mom to make toppings of our choice and it was so quick and ate everything and I had enjoyed with my bro  since my childhood life. It is great to make everything  and feel good as it is all from homemade than store bought ones.I am telling it it was so good and lovely sauce and add fresh veggies of your choice as everything was perfect.I kept the 2 pizza base dough in the fridge for about 5 days and made 2 flavors that is  one  mushroom capsicum pizza with all types of cheeses such as  mozzarella, Parmesan & Mexican cheese and the other one I made only capsicum with three different colors such as red,yellow and green ones. and shredded mozzarella cheese. Thank you so much Swathi for letting this opportunity of this month and it was amazing.

Hope you will make it and make your family enjoy eating homemade pizza base,tomato sauce and toppings on your choice. Isn't it fun? 

Recipe adapted from SeriousEats.

Also recipe suggested by my mom for toppings  and tomato paste.

For Pizza Base:

Ingredients for the thin crust:

* 22 1/2 ounces (about 4 1/2 cups) bread flour, plus more for dusting
* 1 1/2 tablespoons sugar
* .35 ounces kosher salt (about 3 teaspoons)
* 2 teaspoons instant yeast
* 3 tablespoons extra-virgin olive oil
* 15 ounces lukewarm water

Ingredients for making its NY Style pizza sauce

* 1 (28-ounce) can whole peeled tomatoes or Fresh Tomatoes.(I had used 6 fresh tomatoes)-Boiled,peeled off the skin and blend into the mixie with chuks in it.
* 1 tablespoon extra-virgin olive oil
* 1 tablespoon unsalted butter
* 2 medium cloves garlic, grated
* 1 teaspoon dried oregano
* pinch red pepper flakes
* Kosher salt
* 2 six-inch sprigs fresh basil with leaves attached
* 1 medium yellow onion, peeled and split in half
* 1 teaspoon sugar


* Any sliced or chopped veggies of your choice such as capsicum sliced onions,mushroom,Also you can add paneer or sliced jalapenos or even fruit such as pineapple.
* Any Meat as you like.Preferable pre-cooked Chicken pieces if you want.It is optional.
* 1 to 2 cups depends on the size of the pizza - Parmesan or Mozzarella Cheese grated as you like to choose.


For Making the sauce:

1. Pulse the tomatoes and their juice in food processor / Mixie until pureed, or puree with hand blender. Puree should not be completely smooth, but should have no chunks larger than 1/16 of an inch. Set tomatoes aside.
2. Combine butter and oil in medium saucepan and heat over medium-low heat until butter is melted. Add garlic, oregano, pepper flakes, and large pinch salt and cook, stirring frequently, until fragrant but not browned, about 3 minutes. Add tomatoes, basil sprigs, onion halves, and sugar. Bring to a simmer, reduce heat to lowest setting (bubbles should barely be breaking the surface), and cook, stirring occasionally, until reduced by 1/2, about 1 hour. Season to taste with salt. Allow to
cool and store in covered container in the refrigerator for up to 2 weeks.

For Making the thin crust pizza:

1. Combine flour, sugar, salt, and yeast in bowl of food processor or in a bowl. Pulse 3 to 4 times until incorporated if you have food processor. otherwise mix well together with the help of the whisk . Add olive oil and water. Run food processor until mixture forms ball that rides around the bowl above the blade, about 15 seconds. Continue processing 15 seconds longer. Those who don’t have food processor. try it with hand mixer or stand mixer or knead it with your hands and how are you kneading like chappati/roti dough. :).
2. Transfer dough ball to lightly floured surface and knead once or twice by hand until smooth ball is formed. It should pass the windowpane test. Divide dough into three even parts and place each in a covered quart-sized deli container or in a zipper-lock freezer bag. Place in refrigerator and allow to rise at least one day, and up to 5.
3. At least two hours before baking, remove dough from refrigerator and shape into balls by gathering dough towards bottom and pinching shut. Flour well and place each one in a separate medium mixing bowl. Cover tightly with plastic wrap and allow to rise at warm room temperature until roughly doubled in volume.
4. 1 hour before baking, Preheat oven to 400°F. Turn single dough ball out onto lightly flour surface. Gently press out dough into rough 8-inch circle, leaving outer 1-inch higher than the rest. Gently stretch dough by draping over knuckles into a 12 to 14-inch circle about 1/4-inch thick. Transfer to pizza pan.
5. Spread approximately 2/3 cup of sauce evenly over surface of crust, leaving 1/2 to 1-inch border along edge. Add toppings of your choice evenly and spread 1/3 of cheese over sauce evenly
6. Bake until cheese is melted with some browned spots and crust is golden brown and puffed, 10 to 15 minutes or varies depends on your oven
7. Transfer to cutting board, slice, and serve immediately. Repeat with remaining two dough balls, remaining sauce, and remaining cheese

Mango Cupcakes with mango buttercream (Eggless)

Hello Friends

Here I made very unique idea for mother's day as I made mango cupcakes with mango buttercream.It is pure eggless one and no butter for the cupcake batter.I made flower pot attaching all cupcakes to flower shaped.My mom used to make mango cake  as we loved the mangoes lots and it tasted lovely.At the same time for my mom I made this one to cupcakes and she loved it. :) 

Here are the ingredients


For the cupcake.

  • 1 1/2 cups All purpose flour
  • 1 Tsp baking powder
  • A pinch of baking soda(Optional)
  • 2/3 cup sugar
  • 1/3 cup vegetable oil or canola oil
  • 1 Tsp cardamom powder
  • 1 Tsp vanilla extract
  • 1 cup Mango puree.
  • 1/2 Tsp salt

For Buttercream:

  • 1/2 cup butter
  • 2 cups powdered sugar
  • 1/2 Tsp vanilla extract
  • 2 to 3 Tbsp of Milk or water


  • Preheat the oven to 350 F or 180 C
  • sift all the dry ingredients such as flour,baking powder,salt and baking soda in a bowl and keep aside.
  • In an Electric stand mixer with paddle attachment or hand mixer beat the oil and  sugar in a bowl to make very creamy one 
  • Add the mango puree and mix well until it is well incorporated.
  • Add vanilla extract
  • Add cardamom powder
  • Mix well until it is incorporated.
  • Transfer the batter about 2 Tablespoons of each and every into the mini muffin pan or regular muffin pan lined with baking cup paper
  • Bake it for about 15 to 20 minutes or the tooth pick comes out clean after inserted into it.
  • Allow it cool on the cooling rack.

For Making buttercream

  • By using electric stand mixer with paddle attachment or hand mixer beat the butter and sugar to it till it gets very creamy one.
  • Add vanilla extract
  • If it is stiff, then add milk/water to make medium icing and helps to decorate on the top
  • Transfer to the piping bag with 1M swirl tip and decorate it as rosettes

To Assemble:

  • IF you have new flower pot clay one.
  • Place the foam into it and insert the tooth picks 
  • Attach the cupcakes side up after inserted the tooth pick to hold.
  • Decorate the flower pot as your like.
  • Its alike attached flowers in flower pot as decorative display as I made it for my mom on Mother's Day.

Combo Fruit Lassi by Non blogger friend for my Blog Anniversary!

First of all I must thank to Bini who had mailed me and she is my first non blogger friend for my blog 1st anniversary event.It is so wonderful to see her and know about her and she sent combo fruits lassi..Isn't it amazing? 

Introduction about my non blogger friend : Bini Basheer!

My name is Bini Basheer. I am from Kerala. I am working in Kerala State Electricity Board..I have got my mom and dad at my home...I had a brother...My marriage is almost fixed...I came to know about this event through FB....I am a non blogger.Really glad that u allowed non bloggers also to be a part of this wonderful event dear.....Let me use this opportunity to show case my dishes dear...Starting with one of my personal favorites ........

Recipe Name :  Combo Fruit lassi

       I am a great fan of chill items such as smoothie, salads, salsa etc...I sweat a lot...So I always use to consume cold items to make my body chill...I always use to experiment in case of cold items...So the recipe i am going to showcase here is one of my experiments which found a successful result...My family members are great fans of my lassi preparations...You guys also try this when u get time..especially to beat this unbearable hot climate...So letz start


       As this is a combination of lassi of  three fruits, letz discuss one by one...


1)  Papaya ( ripened, chopped) - 1 cup
2)  Yoghurt - 2 tablespoon
3)  Water -  3/4 cup (add more if u want to make more loose)
4)  Sugar -  2 tablespoon (add more if needed)
5)  Cardamom powder - 1 pinch
6)  Cashew nut (crushed) - 1 teaspoon 
7)  Ice cubes (crushed) - 1 teaspoon (small)

Grind all the ingredients numbered 1 to 5 in a blender till the mixture becomes smooth.


1)  Green grapes ( ripened, chopped) - 1 cup
2)  Yoghurt - 2 tablespoon
3)  Water -  3/4 cup (add more if u want to make more loose)
4)  Sugar -  2 tablespoon (add more if needed)
5)  Cardamom powder - 1 pinch
6)  Cashew nut (crushed) - 1 teaspoon 
7)  Ice cubes (crushed) - 1 teaspoon (small)

Grind all the ingredients numbered 1 to 5 in a blender till the mixture becomes smooth


1)  Small Banana ( ripened, chopped)  -  1 cup
2)  Milk -  2 tablespoon
3)  Nutella -  1 tablespoon
4)  Yogurt - 2 tablespoon
5)  Sugar -  2 tablespoon (add more if needed)
6)  Cardamom powder - 1 pinch
7)  Honey - 1 tablespoon
8)  Water - 1/2  teaspoon
9)  Cashew nut (chopped) - 1 teaspoon 
10)  Ice cubes (crushed) - 1 teaspoon (small)

Grind all the ingredients  numbered 1 to 8 in a blender till the mixture becomes smooth. If the mixture is so thick, compensate it with milk...Don't use water)


1)  Fill 1/3 portion of  a glass (preferably a lengthy one) with PAPAYA LASSI. Then garnish this layer with chopped cashew nuts and crushed ice cubes
2)  Fill the next 1/3 portion with BANANA LASSI. Then garnish this layer with chopped cashew nuts and crushed ice cubes
3)  Fill the next 1/3 portion with GREEN GRAPE LASSI. Then garnish this layer with chopped cashew nuts and crushed ice cubes.

Refrigerate and serve this chill chill drink...
