Christmas Fruit Cake

Dear Friends!!!

Here We wish you and your family Merry X Mas :) May your day have filled with fun and happiness!!! Also wishing you and my dearest friends Happy New Year!! :) Herewith I made our favorite Christmas Cake.It was so amazing,tasty,colorful dried fruits and of course It has rum (Spiced flavor). You can opt for Apple juice or orange juice instead of Rum :) :) It is lovely baked and aromatic at home while baking!!! It is so soft and moist while touched the cake after baked fresh from the oven today!! It made me happy and smiled by seeing it :) Here is the recipe and go for it!!!



Ingredients: 

For Soaking!
  • 1 Cup Raisins(Black currants)
  • 1 Cup, Dates  chopped
  • 1/4 Cup, sliced thin Candied Orange/Lemon Peel
  • 1 Cup Unsalted Cashew Pieces chopped
  • 1/2 Cup Pistachios chopped
  • 1/4 Cup Tutti fruity(Colorful)
  • 1/4 Cup Rum or Apple juice concentrate
Method:

  • In a medium saucepan, Add rum or apple juice to it and add all the ingredients under Soaking list.
  •  Allow it to boil on medium heat and transfer it to the bowl.
  • Let it sit for about 10 to 12 hours or overnight at room temperature.More soaking will give you better taste.
 For Caramelized Syrup
  • 6 Tbsp White Sugar
  • 3 Tbsp Water
  • Few drops of Fresh Lemon Juice
  • 1/2 Cup Boiling water
For Cake Preparation: 
  •  2 sticks (8 oz) at room temperature 
  •  2 1/2 cups Powdered Sugar
  • Eggs – 3 large or 4 medium (separated)
  • 1 Tsp Vanilla Extract
  • 2 Cups All purpose flour 
  • 1Tsp Baking powder 
  • 1/2 Tsp Cinnamon Powder
  • 1/4 Tsp Nutmeg Powder
  • 1/4 Tsp Clove Powder
  • 1/4 Tsp Ginger powder

Method:Step by Step wise presentation picture as given.


Once you started beating Egg whites, Preheat oven to 350 degrees Fahrenheit or 180 C.
 Lightly coat baking pans with spray cooking oil or regular oil or apply butter,dust it with flour to remove any excess. or line it with parchment paper.Keep aside.

1. In a small saucepan, add 6 Tbsp Sugar and 3 Tbsp water and few drops of lemon juice.Allow it to boil on medium heat. Swirl pan to mix – do not use spoon.
1.a After few minutes,the color is changing.
1.b. Heat until sugar changes color and becomes caramelized. (approx 10 minutes).
1.c. Add 1/2 cup boiling water and swirl pan again to mix well. Keep aside.
2. In a large mixing bowl, Beat softened butter and powdered sugar by using hand blender
3. Mix well until it is creamy.Scrap all the sides .
4. Add one egg yolk at a time one by one and mix well. 
5. Add Vanilla Extract and mix well until it is well incorporated.
 6. Combine all dry spices, baking powder to the flour before sieve.
7. Sift the flour and all spices powder
8.Whisk the flour and spices powder
9.Put the sifted flour spices powder into the butter egg mixture in 3 additions..
10. Add cooled caramelized sugar syrup a little at a time into the butter flour mixture and mix well.
11. Add soaked fruit/nut mixture into the flour mixture.
12.Mix well until it is well incorporated.
13. In a separate bowl, beat egg whites until it is fluffy and soft peaks form.
14. Fold beaten egg whites into the cake batter.Do not over mix.
15. Pour batter into greased baking pan 9 inch or bundt pan and bake for approx 1 hour at 350 F degrees F. For smaller pans, baking time may vary.
16. Remove cake from oven and allow it to cool for few minutes
