Mango Cupcakes with mango buttercream (Eggless)

Hello Friends


Here I made very unique idea for mother's day as I made mango cupcakes with mango buttercream.It is pure eggless one and no butter for the cupcake batter.I made flower pot attaching all cupcakes to flower shaped.My mom used to make mango cake  as we loved the mangoes lots and it tasted lovely.At the same time for my mom I made this one to cupcakes and she loved it. :) 




Here are the ingredients


Ingredients

For the cupcake.


  • 1 1/2 cups All purpose flour
  • 1 Tsp baking powder
  • A pinch of baking soda(Optional)
  • 2/3 cup sugar
  • 1/3 cup vegetable oil or canola oil
  • 1 Tsp cardamom powder
  • 1 Tsp vanilla extract
  • 1 cup Mango puree.
  • 1/2 Tsp salt

For Buttercream:

  • 1/2 cup butter
  • 2 cups powdered sugar
  • 1/2 Tsp vanilla extract
  • 2 to 3 Tbsp of Milk or water

Method:

  • Preheat the oven to 350 F or 180 C
  • sift all the dry ingredients such as flour,baking powder,salt and baking soda in a bowl and keep aside.
  • In an Electric stand mixer with paddle attachment or hand mixer beat the oil and  sugar in a bowl to make very creamy one 
  • Add the mango puree and mix well until it is well incorporated.
  • Add vanilla extract
  • Add cardamom powder
  • Mix well until it is incorporated.
  • Transfer the batter about 2 Tablespoons of each and every into the mini muffin pan or regular muffin pan lined with baking cup paper
  • Bake it for about 15 to 20 minutes or the tooth pick comes out clean after inserted into it.
  • Allow it cool on the cooling rack.

For Making buttercream

  • By using electric stand mixer with paddle attachment or hand mixer beat the butter and sugar to it till it gets very creamy one.
  • Add vanilla extract
  • If it is stiff, then add milk/water to make medium icing and helps to decorate on the top
  • Transfer to the piping bag with 1M swirl tip and decorate it as rosettes

To Assemble:

  • IF you have new flower pot clay one.
  • Place the foam into it and insert the tooth picks 
  • Attach the cupcakes side up after inserted the tooth pick to hold.
  • Decorate the flower pot as your like.
  • Its alike attached flowers in flower pot as decorative display as I made it for my mom on Mother's Day.

  6. This looks nice, I have done Mango cake but not cup cakes... will make these soon... Love your design ideas with the cup cakes, esp the cupcakes in the pot looks like real flowers... :-)! Good Work!
